Zucchini Casserole

Peel and slice zucchini into 1/4" slices
- 2 tbsp. oil
- 1 onion, chopped
- 1 green pepper, chopped
- 2 cloves garlic, minced
- 1 cup sliced mushrooms
- 4 - 5 chopped tomatoes
- salt & pepper
- 1 tsp. basil
- 1/2 tsp. oregano
- 1 1/2 cups grated cheddar cheese
- 6 cups (3) zucchini
Peanut Butter Chocolate Cheesecakes

Heat oven to 325 degrees. Line twelve 2 1/2 inch muffin cups with foil liners
- 3/4 cup fine crushed chocolate wafers
- 2 tbsp. melted butter (no substitutes)
- 1 tbsp. sugar
- 12 chocolate kisses
- 2 8 oz. packages cream cheese, softened
- 1/3 cup sugar
- 2 eggs
- 1/2 tsp. vanilla
- 1/2 cup chunky peanut butter
- 1/3 cup semisweet chocolate pieces
- 1 tsp. shortening
Louisiana Prawns

Butterfly prawns by cutting shells lengthwise down back
- Prawns, shell and tail on
- 1/4 cup vegetable oil
- 2 tbsp. lemon juice
- 1/4 tsp. salt
- 1/4 tsp. pepper
- 2 to 3 tbsp. barbecue sauce
- 1 bay leaf, crumbled
- garlic powder to taste (or 1 crushed clove)
- 1/2 tsp. dried basil
- 1/2 tsp. paprika
- 1/2 tsp. crushed dried red pepper
Spinach Dip

Mix soup mix with ½ cup warm water to soften vegetables for about 30 minutes
- 1 cup sour cream
- 6 oz. plain yoghurt
- ½ cup miracle whip
- 1 pkg. frozen chopped spinach - cooked, with moisture squeezed out
- 1 pkg. Knorr’s Swiss vegetable soup mix

Butter Tart Slice

To make crust: Cut butter into dry ingredients with pastry blender until crumbly
- The Crust:
- 1 cup butter
- 2 cups flour
- 1/4 cup sugar
- pinch salt
- Butter Tart Filling:
- 1/4 cup butter
- 3 eggs beaten
- 2 cups brown sugar
- 1 Tbsp. baking powder
- pinch salt
- 3/4 cup coconut
- 1 tsp. vanilla
- 1 cup raisins
- 1 Tbsp. flour
- 1 cup chopped pecans (optional)
Hot Wings

Cut tips off wings; cut wings at joints; pat dry
- Chicken wings
- Oil for deep frying
- ½ cup Louisiana hot sauce
- 2 tbsp. vegetable oil
- 2 tsp. butter
- 2 tsp vinegar (red or cider)
- ¼ tsp. garlic powder
- 3 tbsp. ketchup
Greek Style Lemon Roasted Potatoes

Boil whole potatoes in water and a little bit of lemon juice, olive oil and seasons for about 10 minutes

- 8 ounces milk chocolate
- 8 ounces semi-sweet chocolate
- 1 tbsp. butter
- pinch of salt
- 1 tsp. vanilla
- 20 marshmallows, snipped into quarters
- 3/4 coarsely chopped toasted walnuts
Sheela's Chicken Enchiladas

Cook onions in butter until tender but not brown
- 1 medium onion, chopped
- 2 tbsp. butter
- 1 cup salsa
- 1 1/2 cups cooked chicken, chopped
- 1/2 package cream cheese
- 1 tsp. ground cumin
- 1 1/2 cups grated monterey jack or cheddar cheese
- 8 flour tortillas

Ricotta Herb Tarts

Let folded pastry stand at room temperature for 20 minutes to thaw
- ½ of a 17 ¼ oz. pkg. (1 sheet) frozen puff pastry
- 1 slightly beaten egg white
- 1 tsp. water
- 1 cup ricotta cheese
- 2 tbsp. grated parmesan cheese
- 1 egg yolk
- 1 tbsp. light cream or milk
- 1 tbsp. chopped fresh parsley
- 2 tbsp. snipped fresh chives
- ¼ tsp. coarsely ground black pepper
