Baked Monte Cristo Sandwich

Toast bread and remove crusts
- Cheese sauce:
- White bread, toasted and crusts removed
- sliced ham
- sliced tomatoes
- 1 can asparagus
- grated cheddar cheese
- 4 tbsp. butter
- 4 tbsp. flour
- 2 cups milk
- salt & pepper to taste
- 2 cups grated cheddar
Dumplings

Combine dry ingredients. Combine egg, milk and oil and stir into dry ingredients to make soft dough
- 1 cup flour
- 1 1/2 tsp. baking powder
- 1/2 tsp. salt
- 1 egg, beaten
- 1/2 cup milk
- 2 tbsp. vegetable oil
Darlene's Spareribs

Cut ribs and place in roasting pan
- 1 tbsp. chili powder
- 1 tbsp. salt
- 1 tbsp. celery seed
- 1/4 cup brown sugar, firmly packed
- 1 tsp. paprika
- 2 pounds spareribs (back or side)
- 1/2 cup white vinegar
- 1 can cream of tomato soup
Texas Beef Skillet

In a skillet, brown ground beef, drain Top meat with salsa, undrained beans, uncooked rice, water and green pepper
- 1 pound lean ground beef
- 1 1/2 cups salsa
- 1 can red kidney beans
- 1 cup quick cooking rice, uncooked
- 3/4 cup water
- 3 tbsp. green pepper, chopped
- 1 cup cheddar, grated

Basic White Sauce

- 3 tbsp. flour
- 2/3 cup milk
- salt to taste

Melt butter and spices slowly
- 1 pound butter
- 1 tsp. garlic salt
- 1 tsp. celery salt
- 1 tbsp. worcestershire
- 1 pkg. cheerios
- 1 pkg. shreddies
- 1 box pretzel sticks
- 1 pkg. rice chex
- 1/2 pound salted peanuts
- 1 pound mixed nuts
- 8 oz. grated cheddar cheese
Coconut Lemon Squares

Mix together base ingredients and press into 9 x 9 pan
- Base:
- 1 cup flour
- 1/4 cup white sugar
- 1/2 cup margarine
- Topping:
- 2 tsp. grated lemon rind
- 1/4 cup lemon juice
- 2 tbsp. melted butter
- 2 eggs, beaten
- 1 cup medium coconut
- 2/3 cup white sugar
- 2 tbsp. flour
- 1/2 tsp. baking powder
- 1/2 tsp. vanilla
- pinch salt
Crab Cakes with Roasted Red Pepper Aioli

To make bechamel sauce: Melt butter in a medium-sized saucepan and add flour
- Bechamel Sauce:
- 2 Tbsp. butter
- 2 Tbsp. flour
- 1 cup hot milk
- 1 bay leaf
- Crab Cakes:
- 1 lb. crabmeat
- 1/2 red pepper, finely diced
- 2 green onions, diced
- 1/2 cup fresh breadcrumbs
- 1/2 tsp. cayenne
- 1 1/2 tsp. lemon juice
- dash of Worcestershire sauce
- salt and pepper to taste
- 1 cup breadcrumbs
- 1/4 cup butter
- Roasted Red Pepper Aioli:
- 1/2 cup roasted red peppers
- 1/2 cup mayonnaise
- 1 garlic clove, minced
- 1 tsp lemon juice
Carrots L'Orange

Cook carrots in boiling salted water until tender crisp
- 1 bag baby carrots
- 2 Tbsp. brown sugar
- 2 tsp. cornstarch
- 1/2 tsp. ground ginger
- 1/4 tsp. salt
- 1/2 cup orange juice
- 1/4 cup butter
Beef Stew

Brown meat in oil; add seasonings
- 1 1/2 pounds stewing beef
- 1 tbsp. oil
- 1/4 tsp. pepper
- 1 1/2 tsp. salt
- 1 stalk parsley
- 1 bay leaf
- 2 tsp. worcestershire
- 1 clove minced garlic
- 1 tsp. lemon juice
- 1/4 tsp. paprika
- beef stock or hot water
- 2 onions
- 6 carrots
- 3 potatoes
