Peanut Butter Chocolate Cheesecakes

Heat oven to 325 degrees. Line twelve 2 1/2 inch muffin cups with foil liners
- 3/4 cup fine crushed chocolate wafers
- 2 tbsp. melted butter (no substitutes)
- 1 tbsp. sugar
- 12 chocolate kisses
- 2 8 oz. packages cream cheese, softened
- 1/3 cup sugar
- 2 eggs
- 1/2 tsp. vanilla
- 1/2 cup chunky peanut butter
- 1/3 cup semisweet chocolate pieces
- 1 tsp. shortening
Cock-a-Doodle-Do-Da Casserole

Mix wine, soup and sour cream and set aside
- 1/2 cup white wine
- 1 can cream of chicken soup
- 1/2 cup sour cream
- 1/2 package egg noodles, cooked and drained
- 3 cups cubed leftover turkey
- 1 can artichoke hearts, drained and coarsely chopped
- 1/2 can black olives
- 1/4 cup slivered green pepper
- 1/2 onion, chopped
- 1/2 cup parmesan cheese
Cauliflower Casserole

Cook cauliflower in boiling salted water about 10 minutes til barely tender; drain
- 2 lbs. cauliflower, cut into florets
- 1 onion, chopped
- 1 green pepper, chopped
- 3 tbsp. melted butter
- 1 cup grated cheddar cheese
- 2 cups white sauce
- 2 tbsp. toasted sesame seeds
Basic Stir-Fried Pork and Veggie

Sprinkle meat with sesame oil, pepper and 1 tbsp
- Sauce:
- 1 pound pork shoulder butt steak, sliced thin
- Fresh vegetable, washed and cut up (cauliflower, broccoli, etc.)
- sesame oil
- pepper
- 1 tbsp. soya sauce
- 2 tbsp. vegetable oil
- Ginger
- 1 tbsp. cornstarch
- 1/4 cup water
- 2 tbsp. oyster sauce
Zucchini Squares

In a large bowl, beat eggs
- 4 eggs
- ½ tsp. oregano
- ½ tsp. salt
- 2 tsp. parsley
- pepper to taste
- 1 clove garlic, minced
- ½ cup vegetable oil
- 1 cup biscuit mix
- ½ cup onion, chopped fine
- ½ cup parmesan cheese
- 3 cups zucchini, unpeeled and thinly sliced
Chicken Pillows

Cut chicken into 1 inch cubes
- 1 1b. boneless skinless chicken breasts (about 4)
- 3 tbsp. lemon juice
- 2 tbsp. vegetable oil
- 2 cloves garlic, minced
- 1 tsp. leaf oregano
- ½ tsp. salt
- melted butter
- ½ pkg. phyllo pastry leaves
Turnips 'N Apples

Peel, dice and cook turnip
- Crust:
- 1 large turnip
- 1 Tbsp. butter
- 2 apples
- 1/4 cup brown sugar
- pinch of cinnamon
- 1/3 cup flour
- 1/3 cup brown sugar
- 2 Tbsp. butter
Russian Toffee

Bring to slow boil. Stir occasionally until mixture forms a hard ball in cold water (approximately 1 hour)
- 1/2 cup butter
- 1 tin Eagle Brand milk
- 3/4 cup corn syrup
- 2 cups brown sugar
Cherry Loaf Pound Cake

Combine flour and salt. Stir well to blend
- 2 cups flour
- 1/2 tsp. salt
- 1 cup candied cherries, halved
- 1 cup butter
- 1 cup sugar
- 4 eggs
- 2 tsp. almond extract
Stuffed Potatoes

Scoop out potatoes, leaving a thin shell
- 4 baked potatoes, halved
- 1 1/2 cups grated edam cheese
- 1/4 cup sour cream
- 1 tbsp. butter
- 1 tsp. horseradish
- 1 tbsp. minced parsley
- salt & pepper to taste
