Elsie's Potatoes

Cook and mash potatoes. Add all ingredients, except butter, and combine
- 5 lbs. potatoes or 9 large
- 8 oz. low-fat cream cheese
- 1 cup fat-free sour cream
- 2 tsp. onion salt
- 1 tsp. salt
- pinch of pepper
- 2 Tbsp. butter
Hot Artichoke Dip

Mix all ingredients. Bake at 350 degrees for about 10 minutes
- 1 14 oz. can artichoke hearts, drained and chopped
- 1/2 cup parmesan cheese
- 1 cup mayo
- 1/2 tsp. garlic salt
- dash lemon juice
Fall Salad

For pecans, toss with melted butter and spices and bake at 350 degrees for 5 to 10 minutes or until fragrant
- Spiced Pecans:
- Mixed organic baby greens
- Spiced pecans*
- Craisins
- Thinly slices apple or pear
- Thinly sliced red onion
- Thinly sliced red pepper
- Crumbled blue cheese
- 1 cup pecans
- 1 tbsp. butter
- 1/2 tsp. cayenne
- 1 tsp. cinnamon
- Dressing:
- Olive oil
- Vinegar
- Dijon mustard
- Garlic
Mashed Potatoes Almondine

Peel potatoes and boil until tender
- 4 medium potatoes
- 1 1/2 cups cottage cheese
- 1/4 cup sour cream
- 2 tbsp. green onion
- 1 1/2 tsp. salt
- pepper to taste
- 2 tbsp. melted butter
- 1/4 cup slivered almonds
Greek Salad

Chop vegetables and toss together in large bowl
- Dressing:
- 2 large tomatoes
- 1 long english cucumber
- 1/2 red onion
- 1 green pepper
- feta cheese
- kalamata olives
- olive oil
- lemon juice
- oregano
Chocolate Chip Cookies

Cream together shortening and sugars
- 1/2 cup shortening
- 1/2 cup brown sugar
- 1/4 cup white sugar
- 1 beaten egg
- 1 tsp. vanilla
- 1 cup flour
- 1/2 tsp. soda
- 1/2 tsp. salt
- 1 cup chocolate chips
Chocolate Honey Graham Crunch

Melt chocolate in large bowl in microwave
- 2 cups white chocolate melting wafers
- 1 cup unsalted dry roasted peanuts
- 4 cups honey graham cereal
Cranberry Almond Bark

Bake almonds in a 350 degree oven for 8 minutes; cool
- 6 oz. white chocolate melting wafers
- 1/2 cup craisins
- 1/2 cup unblanched whole almonds
Sausage Spread

Blend sausage, cheese, chili sauce and green pepper in food processor
- salami or summer sausage stick
- 1/2 cup cheddar
- chili sauce
- chopped green pepper
- oregano
- parmesan
- cocktail rye bread
Mom's Classic Vegetable Dip

Blend well with an electric mixer
- 1 8 oz. cream cheese
- ½ cup miracle whip
- 1 hard boiled egg
- 2 tbsp. minced onion
- parsley for color
- garlic salt to taste
