Preheat oven to 425F In a pan over medium heat, melt butter
- 2 tbsp. butter
- 2 cloves garlic, chopped
- 1/2 medium onion, chopped
- 5 oz. spinach
- 1 tsp. salt (for spinach)
- 1/3 cup breadcrumbs
- 4 oz. cream cheese
- 1/4 cup parmesan cheese, shredded
- 2 tbsp. dill, chopped
- 1 sheet puff pastry, softened to room temperature
- 1 salmon fillet
- 1 tsp. salt ( for fillet)
- 1 tsp. pepper ( for fillet)
- 1 egg, beaten
Creamy Cranberry Coleslaw w/Raspberry Vinaigrette

Add ingredients to a large bowl
- 1 pkg. coleslaw (14 oz.)
- 1 pkg. broccoli slaw (12 oz.)
- 1 pkg. craisins (6 oz.)
- 1 cup mayonnaise
- 1/2 cup raspberry vinaigrette
- 3 tbsp. vinegar
- 2 tbsp. sugar
- salt and pepper to taste
Shrimp, Tortellini and Spinach

Cook tortellini in large saucepan as directed on package
- 1 pkg. (9oz.) refrigerated cheese tortellini
- 1/4 cup roasted red pepper italian with parmesan dressing
- 2 gloves garlic minced
- 1 can (14 1/2oz.) no salt added diced tomatoes, undrained
- 3/4 lb. cooked cleaned medium shrimp
- 1 bag (6oz.) baby spinach leaves
- 1/4 cup chopped fresh basil
- 2 tbsp. grated parmesan cheese
Grilled Chicken Taco Salad

Prep time: 20 minutes
- 2 cups shredded iceburg lettuce
- 8 tostada shells
- 1 cup frozen corn, thawed, drained
- 4 cooked chicken breasts, shredded
- 1 avocado, sliced
- 3 tbsp. Rancher's choice dressing
- 2 tbsp. barbeque sauce
- 1/2 cup tex mex shredded cheese
Chicken Caesar Wraps

- 3 cups packed shredded romaine lettuce
- 2 cups chopped cooked chicken
- 4 slices cooked bacon, crumbled
- 1/4 cup grated parmesan cheese
- 1/4 cup croutons
- 1/2 cup Caesar dressing
- 4 flout tortillas (8 inch)
Salsa Cheese Boule Dip

Preheat oven to 350F Cut a circle out of the top of the bread and scoop out the inside
- 1 round bread boule
- 1 cup salsa
- 1 1/2 cup shredded cheddar cheese
- 1 (8oz.) pkg. cream cheese , softened
- 1 cup sour cream
Melt in Your Mouth Lemon Bars

Mix crust ingredients with fork as you would for a pie crust
- Crust:
- 2 cups all purpose flour
- 1 cup butter softened
- 1/2 cup powdered sugar
- Filling:
- 4 eggs slightly beaten
- 2 cups sugar
- 4 tbsp. flour
- 6 tbsp. lemon juice
- Frosting:
- 1/2 cup butter (softened)
- 1 cup powdered sugar
- 1 tsp. milk
- 2 tbsp. cold water
Springtime Broccoli Slaw

In a large bowl, combine the broccoli slaw, pumpkin seeds, dried cranberries, sesame seeds and green onions
- Ingredients for vinaigrette:
- 1 (12oz.) bag broccoli slaw
- 1/2 cup roasted pumpkin seeds
- 1/2 cup dried cranberries
- 2 tbsp. sesame seeds
- 1/4 cup chopped green onions
- 3 tbsp. canola oil
- 1 tbsp. sesame oil
- 3 tbsp. rice wine vinegar
- 2 tbsp. soy sauce
- 1 tbsp. honey
- 1 tbsp. fresh lemon juice
- salt and pepper to taste
Bacon Omelet Roll with Salsa

Heat oven to 350F Line 15x10x1 inch pan with parchment paper, with ends extending ove shortest sides of pan
- 8 eggs
- 1 cup milk
- 1/3 cup flour
- 1 red pepper, finely chopped
- 8 slices cooked bacon, crumbled
- 3 green onions, finely chopped
- 1 tsp. dried oregano leaves, crushed
- 1 cup sharp cheddar cheese, shredded
- 1 cup salsa, warmed
Spicy Shrimp Grilled Cheese

- 2 slices thick crust sourdough bread
- 1 tbsp.(15ml.) canned jalapeno, drained and minced
- 2 slices creamy havarti
- 3 whole poached shrimp, peeled and deveined
- 2 slices crisp cooked bacon
- 1 1/2 tsp. (5ml.) fresh cilantro leaves
- freshly ground pepper to taste
- 1 1/2 tbsp. (20ml.) softened unsalted butter
