Chicken Curry Fried Rice

I use left over grilled cilantro chicken for this recipe
- 3 tbs veg oil
- 4 cloves garlic, minced
- 1 1/2 tsp grated fresh ginger
- 1 small onion, coarsely chopped
- 1 tsp curry powder
- 1 tsp chili powder
- 1 tsp ground coriander
- 4 cups cooked jasmine rice; clumps broken up
- 1 cup raisins or dried cranberries
- 3 tbs soy sauce
- 2 cups shredded cooked chicken (can use rotisserie)
- 1 scallion thinly sliced, white and green parts
- 4 tbs fresh cilantro leaves (or 2 tsp dried)
CLASSIC EGGPLANT PARMIGIANA

Salt the eggplant: Peel the eggplant and cut each crosswise into 1/4-inch-thick slices
- Reggiano For the eggplant:
- 2-1/2 lb. eggplant (about 4 small or 2 medium-large)
- Kosher salt
- 3 cups olive oil (or a blend of olive and canola oils)
- For the sauce:
- 3 Tbs. extra-virgin olive oil
- 2 large cloves garlic, peeled and cut in half
- 3-1/2 lb. plum tomatoes, peeled, seeded, and coarsely chopped, or two 28-oz. cans diced tomatoes (preferably San Marzano), drained
- Kosher salt
- 12 large fresh basil leaves, torn in half
- For assembling:
- 6 oz. fresh mozzarella, torn into 1/2-inch pieces
- 1-1/4 cups lightly packed freshly grated Parmigiano-Reggiano (3-1/4 oz.)
HONEY SOY GRILLED ROAST

Have not been able to prepare this without burning a portion of the meat, but the dogs don't mind eating the charre...
- 2 lbs beef roast (chuck, sirloin tip, shoulder or eye of round)
- Marinade
- 2 cloves garlic, mashed
- 2 tsp salt
- 1 cup chicken bullion
- 1/4 cup soy sauce
- 1/4 cup honey
- 1/4 cup catsup
- 1/2 tsp baking soda
- Glaze
- 1/4 cup honey
- 1 tsp dry mustard
CHICKEN ENCHILADAS

Usually serve this with a mixture of yellow rice and black beans
- 1/4 cup milk
- 2 cups chopped, cooked chicken or 1 cup chopped red bell pepper
- 1 pkg (8 oz) cream cheese, cubed 1 jar (8 oz) salsa, divided
- 8 (6 -inch) flour tortillas 3/4 Ib (12 oz) Velveeta cheese, cut up
PARMESAN BREADED POTATOES

These potatoes are very versatile and can be served with anything from marsala dishes to burgers
- 1.5 red potatoes, sliced approx 1/2
- inch thick, washed and blotted dry
- 3 Tbs olive oil
- 1/2 cup dry bread crumbs

- 1/4 cup minced fresh herbs (parsley,
