CURRIED GOAT STEW

Chicken can be substituted for the goat
- 4 lbs 1 `1/2 inch cubes boneless goat meat or chicken
- 3 tbs curry powder
- 1 tbs tumeric
- 1 1/2 tsp salt
- 2 large onions, chopped
- 8 garlic cloves, chopped
- 5 fresh thyme springs
- 1 tbs finely chopped peeled fresh ginger
- 1 bay leaf
- 1/4 tsp minced seeded Scotch Bonnet or habanero chili
- 2 cups beef broth
- 1 1/2 lbs peeled white skinned potatoes, cut into cubes
- 1 cup chopped green onions, divided.
BRAISED SHORT RIBS

Position a rack in the center of the oven and heat the oven to 325°F
- 4-1/2 lbs boned chuck short ribs (8-10 ribs)
- 3 Tbs. vegetable oil
- Kosher salt
- ground black pepper
- 2/3 cup medium-diced carrots
- 2/3 cup medium-diced celery
- 2/3 cup medium-diced onions
- 2 whole dried bay leaves
- 1 Tbs. chopped fresh thyme
- 2 tsp. chopped fresh rosemary
- 2 to 3 whole star anise
- 1 Tbs. finely chopped garlic
- 1/2 cup port
- 1/4 cup lower-sodium soy sauce
- 1 cup canned crushed tomatoes
- 3/4 cup diluted lower-salt beef broth (mix equal parts broth and water)
- 3/4 cup port
- 1 to 2 tsp. sherry vinegar
- 1 to 2 Tbs. chopped fresh parsley
CAJUN OVEN FRIED CHICKEN

- 1 tbs Cajun seasoning
- 1/2 tsp salt
- 1 cup panko
- 2 bone-in chicken breast halves, skinned
- 2 chicken thighs, skinned
- 2 chicken drumsticks, skinned
- Cooking spray
FRENCH ONION SALISBURY STEAK

A step up from your mama's or cafeteria salisbury steak
- 1 1/4 lb ground chuck
- 1/4 cup fresh minced parsley
- 2 tbs scallion, minced
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 2 tbs all purpose flour (place in
- shallow bowl)
- 1 tbs olive oil
- 2 cups onion, sliced
- 1 tsp sugar
- 1 tbs garlic, minced
- 1 tbs tomato paste
- 2 cups beef broth
- 1/4 cup dry red wine
- 3/4 tsp kosher salt
- 1/2 tsp dried thyme leaves
- 4 tsp minced fresh parsley
- 4 tsp Parmesan cheese, shredded
- Ingredients for Cheese Toasts
- 4 slices French bread cut diagonally (1/2 inch thick)
- 2 tbs unsalted butter, softened
- 1/2 tsp garlic, minced
- 1 tsp minced parsley
- 1/4 cup Gruyere or Swiss cheese, grated
- 1 tbs Parmesan cheese, grated
CHICKEN AND WILD RICE CASSEROLE

Good for a crowd and freezes well
- 3 Ibs bone-in chicken breast halves
- with skin
- 1 1/2 tsp salt
- 1 onion, sliced
- 2 6 oz. Pkh long grain and wild rice
- 1 cup sour cream 1 cup water
- 1 cup dry white wine
- 1 tsp curry powder
- 1 cup chopped celery
- 1 Ib sliced mushrooms
- 1 10.75 oz. Can condensed cream of mushroom soup
Grilled Jerk Pork Tenderloin

This version requires about 6 hrs marinating time, but only about 20 minutes grilling timhe
- 2-3 cups Mesquite Wood Chips, covered
- in cold water X 1 hr or more
- 1 Pork Tenderloin
- 1 Red Onion (about 9.5-10 oz),
- cut into six pieces
- 1 Large Jalapeno w/seeds, halved
- 1/2 oz sliced ginger root
- 2-3 large garlic cloves
- 1 Tbs lime juice
- 1/2 Cup Cider Vinegar
- 1 Tbs Olive Oil
- 1 Tbs brown sugar
- 1/2 tsp cinnamon
- 1/4 tsp red pepper
- 1/2 Tbs Allspice
GRILLED LONDON BROIL

Add olive oil sliced red onions to grill and served with the steak
- Marinade:
- 1 1/2 - 2 lb london broil
- 1/2 cup soy sauce
- 1/4 cup veg oil
- 2 tbs molasses
- 2 tsp ground ginger
- 2 tsp dry mustard
- 6 cloves garlic, minced
- 1 med onion, thinly sliced
CHICKEN AND SAUSAGE JAMBALAYA

Prefer to serve this with yellow rice rather than white
- 5 1/2 lb chicken pieces
- 4 tbs vegetable oil
- 3 medium onions, chopped
- 1 1/2 lb Andouille or other spicy pork sausage, cut crosswise into 1/4 in slices
- 2 celery ribs
- 4 garlic cloves, finely chopped
- 1 red bell pepper, chopped
- 1 14-16 oz can whole tomatoes
- 2 cups chicken stock or broth
- 1/4 tsp long-grain white rice, rinsed well
- 1/4 tsp cayenne (optional)
- 1 cup thinly sliced scallions
