GOLDEN GATE CHOW MEIN

Skinless chicken breast or thighs can be subsituted
- 1 lb. lean pork steak
- 1 can (3 oz) sliced mushrooms,
- 1 cup sliced celery drained (reserve 1/2 cup liquid)
- 1/2 cup chopped onion
- 1 can (16 oz) Chinese veg, drained
- 3 tbs soy sauce
- 2 cups beef broth
- 1 tbs browning sauce
- 3 tbs cornstarch 3 cups chow mein noodles
GRILLED BOURBON TENDERLOIN

Easy week night meat. Freeze any left over basting sauce
- 2 pork tenderloins (about 2 lbs)
- 1 tbs vegetable oil
- 1 tbs Old Bay
- 1 tbs chopped fresh garlic
- SAUCE
- 1 cup peach preserves
- 1/4 cup bourbon
- 1/4 cup ketchup
- 1 1/2 tsp Old Bay
GRILLED HOISON/BOURBON PORK TENDERLOIN

- 1 cup hickory chips
- 1/3 cup hoison sauce
- 2 tbs seasoned rice vinegar
- 2 tbs bourbon
- 2 tbs maple syrup
- 1.5 tsp grated peeled fresh ginger
- 1.5 tsp fresh lime juice
- 1/2 tsp chile paste w/garlic
- 1 garlic clove, minced
- 2 1 lb pork tenderloins, trimmed
- 1/2 tsp salt
- 1/2 tsp ground black pepper
- cooking spray
HERBED CHICKEN AND DUMPLINGS

Chicken and dumplings were always a holiday traditional dish
- 5 bone-in, skin-on Chicken Breasts or
- one whole chicken + 2 breasts
- 10 cups chicken broth (including broth from the bird)
- 4 cups all purpose flour, divided into 2 cups each
- Flour for dusting
- 2/3 cups Crisco shortening, divided into 1/3 cups
- 1 tsp salt, divided
- 1 cup whole milk, divided into one-half cups
- 2 tsp dried thyme, divided
- 2 tsp dried sage, divided
- 1 Tbs poultry seasoning, or to taste
- Salt/Pepper to taste
GRILLED PEACH GLAZED CHOPS

The peaches are easy to grill
- 3 cups chopped, peeled peaches (about 1 lb)
- 1 cup dry white wine
- 1/4 cup sugar
- 1 tsp salt, divided
- 1/4 tsp black pepper, divided
- 2 tbs white wine vinegar
- 2 tbs molasses
- 1 tsp chili powder
- 1/2 tsp paprika
- 1/4 tsp ground red pepper
- 6 6 oz bone-in center cut pork chops
- 6 peaches, halved and pitted
ARTICHOKE DIP

This is served hot. Use crackers or toasted bread
- 2 15 oz. cans artichoke hearts, drained and chopped 1 cup grated Parmesan cheese
- 1 cup mayo
- 1 small onion, minced
- 2 garlic cloves, chopped
- 1 tsp lemon juice
HERB ROASTED TENDERLION WITH PEARS

Any left over pork/pears can be served over salad greens for another light meal
- 2 pork tenderloins (about 1.5 lbs total), excess fat removed
- 2 garlic cloves, thinly sliced
- 1 tbs fresh thyme, minced
- coarse salt and ground pepper
- 4 bartlett pears, quartered and cored
APPLE PECAN SALAD

This only takes about ten minutes to prepare
- 8 cups mixed greens (pre-washed)
- 1 fuji apple, cut in half and sliced
- thinly
- 14 pecan halves
- 1 Tbs olive oil
- 1 Tbs granulated sugar
- 2 Scallions,chopped (white and green
- parts)
- 1/2 cup grated cheddar or parmesan
- cheese

Recipe came from a souvenier cutting board brought back from Jamaica by my boss (Bob Beckham)
- 1 1/2 cup dried black-eyed peas
- 2 tbs olive oil
- 1 Ib bacon, ham or sausage
- 1 medium onion, chopped
- 1/2 tsp salt
- 3/4 cup long-grain white rice Dash hot sauce
- 3/4 cup minced green onion,
- 2 tbs minced parsley
