- 1 16.3 oz refrigerated jumbo biscuits
- 2 tbs olive oil
- 1 tbs grated Parmesan cheese
- 1 1/2 tsp chopped parsley
- pinch kosher salt

GRILLED HULI HULI CHICKEN

Add halved chicken breasts for those that don't like dark meat
- 1/4 cup pineapple juice
- 1/4 cup fresh lime juice
- 1/4 cup dark brown sugar
- 2 tbs ketchup
- 2 tbs dark soy sauce
- 1 tbs garlic, minced
- 1 tbs fresh ginger, minced
- 1 tbs veg oil
- salt/pepper
- 4 drumsticks/thighs
JAMAICA JERK CHICKEN WINGS

You can adjust the heat by using less or more jalapenos
- 2 tbs allspice
- 6 cloves garlic, crushed
- 2 tbs ground ginger
- 2 tbs lemon juice
- 2 tbs brown sugar or sugar substitute 1/2 cup olive oil
- 1 tsp red pepper
- 1/3 cup red wine vinegar
- 1/2 tsp salt
- 1 cup chopped onion
- 1 tbs ground cinnamom
- 2 chopped jalapeno peppers
- 1 tbs black pepper
- 3-5 lbs cut up chicken or
- 16 wings
AMARETTO CHEESECAKE

This is a rich dessert so I like to make the mini cheesecakes and have several different toppings available
- 1 1/3 cups finely crushed graham crackers 1/2 tsp ground cinnamon
- 3 8 oz. pkgs. cream cheese, softened
- 2 tbs all-purpose flour
- 1/2 tsp shredded lemon peel 1 egg yolk
- 1/4 cup finely chopped walnuts
- 1/2 cup margarine or butter, melted
- 1 cup sugar
- 1 tsp vanilla
- 2 eggs
- 1/2 cup Amaretto
THYME POTATOES AU GRATIN

1. Heat oven to 350 degrees F
- 3 cups whipping cream
- 1 large clove garlic, minced
- 2 Tbsp. butter, softened
- 4 lb. red potatoes, peeled and thinly sliced
- 4 oz. Parmesan cheese, grated
- 2 Tbsp. snipped fresh thyme
- 1/4 tsp. freshly grated nutmeg
- 1/4 tsp. freshly ground pepper
- Shaved Parmesan, Italian (flat-leaf) parsley, dried tomato slices (optional)
ORANGE GRILLED CHICKEN PALILLARDS

Use thin chicken cutlets or pound chicken breast between two pieces of wax paper or in plastic wrap
- 1 cup orange marmalade
- 2 tbs lemon juice
- 1 tbs OJ
- 4 bay leaves
- 1/4 tsp ground cloves
- coarse salt
- ground pepper
- 12 chicken paillards (or 6 chicken breast cutlets, halved and
- pounded to 1/4 inch thickness
- 2 oranges (1 cut in thin slices; 1 cut in wedges)
DOUBLE BLUEBERRY MUFFINS

- 1/2 cup (1 stick) unsalted butter, room temp
- 3/4 cup + 1 tbs sugar
- 2 large eggs
- 2 cups fresh blueberries, rinsed
- 1 tbs finely grated lemon zest
- 1 cup all purpose flour
- 1 cup yellow cornmeal
- 2 tsp baking powder
- 1/2 tsp salt
- 1/2 cup milk
