TRIPLE SEC GRILLED HAM STEAK

Easy week night meal. Goes well with macaroni and cheese or rosemary potatoes
- 1 Ham Steak, approx 1.5 lbs.
- 1 large sliced Jalapeno pepper, w/seeds
- 3 Tbs brown sugar, divided
- 1/4 cup Triple Sec
- 1 cup orange juice
- 1/2 Tbs ground cumin
- 1/4 tsp ground allspice
RIBS AND RICE WITH THYME

This can be served as a side dish or a one-dish meal
- 1 lb boneless country style ribs
- 1 cup white long grain rice
- 1 cup chopped onion
- 1/3 cup chopped fresh garlic
- 2 Tbs butter or margarine, for sauteing
- 1 Tbs butter or margarine for rice
- 1 Tbs fresh thyme leaves or 1 tsp dried
- Salt/Pepper to taste
VEGETABLE EGG ROLLS

VEGETABLE EGG ROLLS WITH HOISIN/CHILE GARLIC SAUCE
- Filling:
- 1 12/ tbs peanut oil
- 1 cloves garlic, minced
- 1/2 cup cabbage, shredded thin
- 1/2 cup bamboo shoots, drained and sliced thin
- 1 cup carrots, shredded sl
- 1 oz dried shitake mushrooms rehydrated and sliced thin
- 2 tbs Hoisin sauce
- 2 tbs chile sauce
- 1 tbs soy sauce
- 1 tsp water
- 2 tsp cornstarch
- 14 egg roll wrappers
- Salt and pepper to taste
- Ingredients for Paste Mixture:
- 2 tbs flour
- 2 tbs water
RYE STUFFED PORK CHOPS

This stuffing is a nice side dish to any pork entree
- Stuffing:
- 2 boneless center-cut pork chops (about 5 oz each)
- Salt/Pepper
- 1 tbs Olive oil
- 1 cup rye bread (about 2 slices)
- 1 tsp unsalted butter
- 1/4 cup onion, diced
- 1/4 cup celery, diced or 1/2 tsp celery seed
- 1/4 cup dried apples, diced
- 1 tsp minced fresh thyme leaves
- 1/2 tsp dried savory
- 1/4 cup chicken broth
- 1 tbs apple cider vinegar
- Salt/Pepper
- Sauce:
- 2 tbs shallots, minced
- 1 tsp all-purpose flour
- 1/4 apple cider or juice
- 1/4 cup dry white wine
- 1 tsp apple cider vinegar
- Optional:
- tsp apple jelly
- fresh thyme leaves
TUSCAN CHICKPEA SOUP

Heat the olive oil in a Dutch oven over medium heat
- 2 tablespoons olive oil
- 2 cups finely chopped onion
- 8 garlic cloves, minced
- 4 cups water
- 1 teaspoon minced fresh or 1/4 teaspoon dried rosemary
- 3/4 teaspoon salt
- 1/4 teaspoon black pepper
- 3 (15 1/2-ounce) cans chickpeas (garbanzo beans), rinsed and drained
- 1 (14 1/2-ounce) can diced tomatoes, undrained
- 1 to 2 1 to 2 tablespoons balsamic vinegar
- 6 tablespoons (1 1/2 ounces) grated fresh Parmesan cheese
BALSAMIC MARINATED LONDON BROIL

- 4 garlic cloves, minched
- 1/4 cup balsamic vinegar
- 3 tbs olive oil
- 1 1/2 lbs (1 1/4 inch thick) top round London Broil
GRILLED SPICE RUBBED PORK ROAST

- 1 1/4 lb center-cut pork loin roast
- RUB
- 2 tsp paprika
- 1 tsp garlic powder, chili powder, kosher salt and pepper
- 1/2 tsp cinnamon and cayenne
- GLAZE
- 2 tbs shallots, minced
- 1/2 cup unsweetened cranberry juice
- 3 tbs dried cranberries
- 1/3 cup canned jellied cranberry sauce
- 1/4 cup maple syrup
- 1 tbs lime juice
- 1 tsp dijon mustard

BEEF BOURGUIGNON

- 1/4 pound thick-sliced bacon (3 slices), cut into l-inch-wide pieces
- 3 pounds boneless beef chuck, cut into 2-inch chunks
- Salt and freshly ground black pepper
- 1/3 cup all-purpose flour
- 2 tablespoons vegetable oil
- 4 1/2 tablespoons unsalted butter
- 1/2 cup brandy
- 1 (4-inch) piece celery rib
- 4 fresh parsley stems (without leaves)
- 4 fresh thyme sprigs
- 2 Turkish bay leaves or 1 California bay leaf
- 2 whole cloves
- 2 onions, finely chopped
- 3 large garlic cloves, finely chopped
- 2 carrots, peeled if desired and cut into 1/4-inch-thick slices
- 1 tablespoon tomato paste
