CHICKEN FRANCAIS

Ingredients
- 1 egg
- 1/4 cup (1 oz) fresh Parmesan cheese
- 1/4 cup fresh parsley
- 1/4 cup dry white wine
- 2 tbs lemon juice
- 1/4 tsp salt
- 1/8 tsp hot pepper sauce
- 3 garlic cloves, minced
- 8 (6 oz) skinless, boneless chicken breast halves
- 1/4 cup all purpose flour
- 1 tbs olive oil
- Cooking spay
- 2 tbs butter
- 1/4 cup dry white wine
- 3 tbs lemon juice

Step 1
Combine first 8 ingredients in a dish. Place each chicken breast halve b/t 2 sheets of plastic wrap or wax paper and pound to 1/4 inch thickness using meat mallet or rolling pin. Dredge chicken in flour and dip in egg mixture.
Heat 1 ½ tsp oil in large nonstick skillet coated w/coating spray over med heat. Add 4 chicken breast halves; cook 4 min on each side or until done. Remove from pan and keep warm. Wipe drippings from pan w/paper towel. Repeat procedure with 1 ½ tsp olive oil and remaining chicken.
Melt butter in pan, add 1/4 cup wine and 3 tbs lemon juice. Bring to a boil, cook 10 second. Serve immediately over chicken.
