CORNISH HENS WITH ORANGE RICE

A lengthy, special occasion dish
- 6 1 1/4 Ib Cornish hens
- 1/2 cup butter or margarine, melted 3 tbs cornstarch
- 1 2/3 cups Sauternes
- 1 cup orange juice
- 1/2 tsp salt
- 1 10 oz. jar apple jelly Orange rice (below)
- Brown Cornish hens all over in butter in a large deep skillet over medium high heat; remove hens, and place in a greased roasting pan. Add cornstarch to drippings in skillet, blending well. Add apple
- Pour 1/2 cup sauce over Cornish hens in roasting pan; bake, uncovered at 350 for 1 hour and 10 minutes, basting often.
- Serve hens with remaining sauce.
- ORANGE RICE
- Ingredients 2 cups diced celery w/leaves
- 1/2 cup chopped onion
- 1/2 cup butter or margarine, melted
- 2 cups water
- 1 tsp salt
- 1 tbs grated orange rind
- 1 cup fresh orange juice
- 1 1/2 cups uncooked long-grain rice

- 1 chicken (5 Ibs)
- 3 sprigs fresh thyme
- 3 sprigs fresh sage
- 3 sprigs flat leaf parsley
- 1 cup chicken broth, or more as needed Salt and pepper

Annatto Spiced Grilled Turkey

Annatto Spiced Grilled Turkey is a great Indian spiced turkey for Thanksgiving or any feast! For a stronger flavor,
- 1 (10- to 12-pound) turkey
- Salt and pepper
- 2 dried ancho chili peppers
- 1 tablespoon annatto seeds
- 1 tablespoon dried marjoram
- 2 cups orange juice
- 3 tablespoons lime juice
- 4 cloves garlic, minced
- 1/2 teaspoon ground cumin
- 1 tablespoon extra-virgin olive oil, for brushing
PASTA PRIMAVERA

Soak morels in warm water in a small bowl 30 minutes
- 1 oz dried morel mushrooms
- 1 1/2 cups warm water
- 1/2 lb asparagus, trimmed and cut into 1-inch pieces
- 1/4 lb green beans (preferably haricots verts), trimmed and cut into 1-inch pieces
- 3/4 cup frozen baby peas, thawed
- 2 teaspoons minced garlic
- Rounded 1/2 teaspoon dried hot red pepper flakes
- 4 tablespoons extra-virgin olive oil
- 1 1/2 pints grape tomatoes
- 1 tablespoon balsamic vinegar
- 3 tablespoons water
- 1 lb spaghettini (thin spaghetti)
- 1/2 stick (1/4 cup) unsalted butter
- 2/3 cup heavy cream2 of 4Pasta Primavera (continued)
- 1 teaspoon finely grated fresh lemon zest
- 2 oz finely grated Parmigiano-Reggiano (1 cup)
- 1/4 cup finely chopped fresh flat-leaf parsley
- 1/4 cup finely chopped fresh basil
- 1/3 cup pine nuts (1 1/2 oz), lightly toasted
- Garnish: Parmigiano-Reggiano shavings Prepare
LOW CARB MUFFINS

- 2 cups almond flour (or other low carb nut flour)
- 2 tsp baking powder
- 1/4 tsp salt
- 1/2 cup (1 stick) butter, melted
- 4 eggs
- 1/3 cup water
- Sweetener to taste; about 1/3 cup works well
