ORANGE SOY BABY BACK RIBS

Ribs can be grilled. Baste with sauce about 10-15 minutes before pulling off grill; served extra sauce on side
- 2 racks baby back pork ribs (2-3 lbs total), cut
- into individual ribs
- 1/4 cup orange juice
- 1/4 cup soy sauce
- 1/4 cup dark brown sugar
- 1 tsp ground cumin
ESCARGOTS AUX CHAMPIGNON

- 12 large mushroom caps - cleaned 1,4 cup white wine
- 1 dash salt
- Snail Butter
- 3 tbs butter - softened
- 1 tbs white wine
- 1 dash Tabasco sauce
- 2 tbs butter
- 1 dash black pepper 1/2 tsp garlic powder
- 1 12 tsp garlic - chopped
- 1 tsp parsley - chopped
- 12 snails
PLUM SAUCED RIBS

Can be grilled. Don't baste with sauce until almost done to prevent burning
- 5-6 lbs pork spare ribs
- 3/4 cup plum jam
- 2-3 garlic cloves, minced
- 3/4 cup soy sauce
- 3/4 cup honey
SOUTHWESTERN SHRIMP TACO SALAD

1. Prepare grill to medium-high heat
- 1/4 cup fresh lime juice
- 2 tablespoons olive oil
- 1 teaspoon ground cumin
- 2 teaspoons minced garlic
- 2 teaspoons maple syrup
- 2 teaspoons chipotle hot sauce
- 3/4 pound medium shrimp, peeled and deveined
- 2 ears shucked corn
- Cooking spray
- 1 cup chopped romaine lettuce
- 1/2 cup chopped green onions
- 1/4 cup chopped fresh cilantro
- 1 (15-ounce) can black beans, rinsed and drained
- 3 plum tomatoes, chopped
- 2 ounces baked blue corn tortilla chips (about 1 1/2 cups)
- 1/3 cup light sour cream
- 1/4 cup diced peeled avocado
- Lime wedges (optional)
ESCARGOTS BOURGUIGNONNE

Serve with warm french bread to soak up the snail butter
- 3/4 lb sweet butter
- 1 garlic clove
- 1/4 tsp salt
- 1 pinch nutmeg
- 2 tbs shallots
- 2 tbs chopped parsley
- 1 dash pepper
- 4 dozen snails
- 2 tbs dry white wine
CHEESE SPINACH DIP

This is served warm. Use hearty crackers or toasted bread
- 2 tablespoons butter
- 1/4 cup chopped onion
- 2 cloves garlic (1 tsp)
- 1 tbs all purpose flour
- 1 3/4 cup half-and-half
- 2 9 oz pkg frozen chopped spinach, thawed/drained
- 1 8 oz can sliced water chestnuts, drained
- 1 cup shredded cheddar cheese
- 1 pkg dry vegetable soup mix
- 1/4 cup shredded Parm cheese
CHOCOLATE ESPRESSO CREME

- Topping:
- 1 cup heavy whipping cream
- 5 ounces Ghirdelli 60% cocoa chocolate chips
- 1 tsp ground espresso powder
- 3.5 tbs granulated sugar
- 1/2 cup heavy whipping cream
- 6-8 chocolate chips for shaving
CHICKEN AND OKRA STEW

1. Heat 2 teaspoons oil in a Dutch oven over medium-high heat
- 4 teaspoons canola oil, divided
- 2 pounds skinless, boneless chicken thighs, quartered
- 1 habanero pepper
- 1 1/2 cups chopped green bell pepper
- 1 cup finely chopped onion
- 2/3 cup finely chopped celery
- 2 1/2 cups chopped plum tomato
- 2 tablespoons chopped fresh parsley
- 1 tablespoon chopped fresh oregano
- 1 teaspoon salt
- 1 teaspoon freshly ground black pepper
- 1/8 teaspoon ground cloves
- 1 (14-ounce) can fat-free, less-sodium chicken broth
- 1 pound fresh okra pods, cut into 1-inch pieces

- 2 1/2 quarts cold water

- 1 can (12 oz) frozen white grape juice
- concentrate, thawed
- 1 tsp ground ginger
WHOLE ROSEMARY PORK LOIN WITH PORT WINE

- 3 tbs olive oil
- 16 whole peeled garlic cloves
- 2 tbs minced garlic cloves
- 1 8 lb whole boneless pork loin, patted dry at room temp
- salt and ground pepper
- 3 tbs minced fresh rosemary, snipped and divided
- 16 dried apricots or similar amount of favorite dried fruit (pears)
- 1/3 cup dried cranberries
- kitchen twine
- 1/4 cup apple jelly
- 1/4 cup port
- 1/2 cup chicken broth
- 2 tbs apple jelly
- 2 tsp cornstarch
