Unstuffed Cabbage Rolls

In a large skillet, heat olive oil over medium heat
- 1 1/2-2 lbs. lean ground beef
- 1 tablespoon extra virgin olive oil
- 1 large onion, chopped
- 1 clove garlic, minced
- 1 small cabbage, chopped
- 2 cans (14.5 oz. EACH) low sodium diced tomatoes
- 1 can (8 oz.) tomato sauce
- 1/2 cup water
- 1 teaspoon ground black pepper
- 1 teaspoon sea salt
Aunt Millie's Hot Chicken Salad

Mix all ingredients together
- 2 boneless chicken breasts (cooked, shredded - pull apart into small pieces)
- 1 can Cream of Chicken Soup
- 1 cup chopped celery
- 2 teaspoons minced onion
- 1/2 cup walnuts
- 1 small can mushrooms (drained)
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 2 tablespoons lemon juice
- 3/4 cup mayonnaise
- 3 boiled eggs, chopped
Pasta Fagioli Soup

Brown the ground beef in a large pot over medium heat
- 1 pound ground beef
- 1 small onion, diced
- 1 large carrot, julienne
- 3 stalks celery, chopped
- 2 cloves garlic, minced
- 2 14.5 oz. cans diced tomatoes
- 1 15 oz. can red kidney beans (with liquid)
- 1 15 oz. can great northern beans (with liquid)
- 1 15 oz. can tomato sauce
- 1 12 oz. can V-8 juice
- 1 tablespoon white vinegar
- 1 1/2 teaspoons salt
- 1 teaspoon oregano
- 1 teaspoon basil
- 1/2 teaspoon pepper
- 1/2 teaspoon thyme
- 1/2 pound ditalini pasta
Blueberry Buckle

Mix dry ingredients and fold in blueberries in greased 8x8 pan
- 3/4 cup sugar
- 2 cups blueberries
- 1/4 cup soft margarine
- 1 egg
- 1/2 cup milk
- 2 cups flour
- 1 teaspoon vanilla
- 2 teaspoon baking powder
- 1/2 teaspoon salt
- Topping
- 1/2 cup sugar
- 1/3 cup flour
- 1/4 cup melted butter
- Cinammon
Antipasto Squares

Open one of the packages of crescent rolls and spread the entire roll with fingers over the bottom of a 9x13 pan
- 1 large jar Mancini Roasted Red Peppers, drained and sliced into mid-sized julienne strips
- 2 packages Crescent Rolls, refrigerated
- 1/4 lb. Provolone Cheese, sliced thin
- 1/4 lb. Genoa Salami, sliced thin
- 1/4 lb. Swiss Cheese, sliced thin
- 1/4 lb. Pepperoni, sliced, large roll size
- 3 eggs, beaten with a little pepper
- 3 tablespoons Parmesan Cheese

- 1 cup (2 sticks) butter
- 2/3 cup brown sugar
- 2/3 cup sugar
- 1 egg
- 1 1/2 teaspoon vanilla extract
- 2 cups flour
- 1 1/4 teaspoon baking soda
- 1 teaspoon salt
- 1 3/4 cups M&M Brand Milk Chocolate Candies

- 3 pounds sweet or hot Italian sausage, casings discarded
- 1 medium red onion, sliced thin
- 4 large garliccloves, chopped
- 1/2 cup dry red wine
- 2 (28-ounce) cans crushed tomatoes with basil
- 1 cup pitted kalamata olives, quartered lengthwise
- 1 bay leaf
- 1 cup water
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1 pound penne
- 2 cups Parmigiano-Reggiano
Strawberry-Balsamic Dressing

Combine all ingredients in a blender and blend until very smooth
- 2/3 cup sliced strawberries
- 1/4 cup balsamic vinegar
- 1/2 shallot, chopped
- 2 teaspoons fresh thyme leaves
- 1 1/4 teaspoon Dijon mustard
- 1/4 teaspoon ground black pepper
- 1/4 cup water

- One quart 1% milk
- 1 cup rice
- 3/4 cup sugar
- 1 tablespoon vanilla
- 1 egg, beaten
