Baked Oatmeal

****You can prep the night before, refrigerate and then slide it into the oven as you are making your coffee
- 2 cups rolled (NOT INSTANT) oats
- 1/2 cup walnuts, toasted and chopped, divided
- 1/3 cup sugar OR maple syrup, plus more for serving
- 1 teaspoon baking powder
- 1 1/2 teaspoon ground cinnamon
- Scant 1/2 teaspoon fine-grain sea salt
- 2 cups milk
- 1 large egg
- 3 tablespoons unsalted butter, melted and divided
- 2 teaspoons vanilla extract
- 2 ripe bananas, sliced into pieces
- 1 1/2 cups fresh or frozen blueberries, huckleberries, or mixed berries
Sea Shells Con Broccoli

Cook pasta according to package directions, adding broccoli the last 2 minutes of cooking time
- 16 oz. Mueller Sea Shells
- 4 cups fresh broccoli florets, uncooked
- 1/4 cup extra virgin olive oil
- 4 cloves garlic, minced OR 1 teaspoon garlic powder
- 1 teaspoon dried basil
- 1/2 teaspoon dried rosemary
- 1/4 cup sun dried tomatoes, chopped fine
- 1/4 cup white wine (optional)
- 1 cup chicken OR vegetable broth
- 1 cup parmesan cheese
- Salt and pepper to taste
Garlic Herb Pasta Side Dish

Cook and drain pasta following package instructions
- Zest of 1/2 lemon (1/2 teaspoon) no white
- 8 oz. angel hair pasta
- 3 tablespoons herb garlic butter
- 2 tablespoons extra virgin olive oil
- 2 cups arugula (or baby spinach) leaves
- 1/3 cup grated Parmesan cheese
- 1/2 teaspoon kosher salt
- 1/4 teaspoon pepper

- 2 cups Baby Spinach leaves, fresh OR thawed frozen spinach
- 1 lb. uncooked medium shrimp, peeled and deveined
- 1 tablespoon vegetable oil
- 2 tablespoons grated Parmesan cheese
Cranberry-Pineapple Minis

- 1 can (20 oz.) crushed pineapple, in juice
- 2 pkg. (3 oz. each) Raspberry Flavor Gelatin
- 1 can (16 oz.) whole berry cranberry sauce
- 2/3 cup chopped walnut pieces
- 1 apple, chopped
Chocolate Chip Zucchini Cookies

Preheat oven to 350 degrees
- No stick Cooking Spray
- 1/2 cup butter
- 1 cup sugar
- 1 egg, beaten
- 2 cups all purpose flour
- 1 teaspoon baking soda
- 1 easpoon ground cinnamon
- Pinch ground nutmeg
- 1/2 teaspoon salt
- 1 cup zucchini, finely grated
- 1 1/2 cups semi-sweet chocolate chips
- 3/4 cup chopped walnuts (optional)
