Swedish Cocoa Balls

Blend first 3 ingredients, then add the rest
- 1/2 c. margarine or butter
- 2/3 c. powdered sugar
- 3 T. cocoa
- 1 T. strong coffee (liquid)
- 1/2 t. rum flavoring
- 1 3/4 c. oatmeal
- candied fruit (optional)
Corn Biscuits with Andouille Gravy

Preheat your oven to 400°F
- 2 cups Flour
- 1/2 cup Corn Flour
- 2 teaspoons Baking Powder
- 1 teaspoon Baking Soda
- 2 tablespoons Sugar
- 1/2 teaspoon Salt
- 8 tablespoons Cold Unsalted Butter (cubed)
- 3/4 cup Buttermilk
- For the Sausage Gravy
- 2 tablespoons Olive Oil
- 1/2 cup Onion (minced)
- 1 pound Andouille Sausage (casing removed, substitute with Mexican chorizo)
- 2 1/2 tablespoons Flour
- 2 cups Low Sodium Chicken Stock
- 3/4 cup Heavy Cream
- 3 Scallions (sliced)
- Pinch Red Pepper Flakes
- 1/3 cup Flat Leaf Parsley Leaves (chopped)
- Salt
Bears Brat

Beer Mushtard: For the bratwurst: Preheat a grill to medium-high heat
- 2 cans lager or pilsner beer
- 3 medium Granny Smith apples, peeled and sliced
- 1 onion, sliced
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 8 fresh bratwurst
- 1/2 cup stone-ground mustard
- 1 to 2 tablespoon pickled jalapenos, chopped
- 1 tablespoon mayonnaise
- 8 pretzel rolls
- Caramelized Onions, recipe follows
- 2 tablespoons vegetable oil
- 4 medium yellow onions, sliced thin
- Salt and freshly ground black pepper
Onion Strings

Slice onion very thin. Place in a baking dish and cover with buttermilk and soak for at least an hour
- 1 whole Large Onion
- 2 cups Buttermilk
- 2 cups All-purpose Flour
- 1 Tablespoon (scant) Salt
- 1/4 teaspoon (to 1/2 Teaspoon) Cayenne Pepper
- 1 quart (to 2 Quarts) Canola Oil
- Black Pepper To Taste
Iced Sugar Cookies

Recipe adapted from Home Cooking with Trisha Yearwood
- Cookies:
- 2 cups all-purpose flour, plus more for dusting
- 2 teaspoons baking powder
- 1/2 teaspoon fine salt
- 1/2 cup (1 stick) unsalted butter
- 1 cup granulated sugar
- 1 large egg
- 1/2 teaspoon vanilla extract
- Icing:
- One 1-pound box confectioners' sugar
- 3 tablespoons meringue powder
- 1/3 cup warm (80 to 90 degrees F) water
- Food coloring, optional
- Assorted sprinkles, colored sugar and small candy pieces
Instant Cheesy Grits with Shrimp

I wanted some cheesy grits in a hurry & came up with this recipe
- 2 pkgs. instant grits
- 1 c. water
- 1-2 T. jarred cheese sauce
- 1/2 oz. sharp or regular cheddar cheese
- Optional: 5-6 cooked shrimp
Brussels Sprout-Lemon Pizza

Brussels sprouts make for a crispy, chewy pizza topping
- 1 tablespoon plus 1 teaspoon extra-virgin olive oil
- 3/4 pound store-bought pizza dough
- 3 ounces lightly salted fresh mozzarella, thinly sliced
- 1 1/2 ounces finely grated Pecorino Romano cheese (about 2/3 cup)
- 3 cups packed brussels sprout leaves (from about 1/2 pound)
- Coarse salt and freshly ground pepper
- 5 paper-thin lemon slices, cut into half-moons (from 1/2 lemon)
Turkey Club Enchilada Casserole

Great recipe to use with leftover turkey, rotisserie chicken, or frozen chicken strips
- For the Skillet Gravy:
- 2 tablespoons butter
- 2 tablespoons flour
- 1 1/2 cups chicken or turkey stock
- 1 2- to 2 1/2-pound cooked roast turkey breast
- 2 tablespoons EVOO – Extra Virgin Olive Oil
- 1/4 to 1/3 pound center-cut smoky bacon or Apple wood bacon
- 2 medium or 1 large onion, finely chopped
- 4 cloves garlic, finely chopped
- 2 jalapeño or Fresno peppers (seeded for a milder filling), chopped
- 1 tablespoon ground cumin, scant palmful
- Black pepper
- 1/4 cup cilantro or parsley, finely chopped
- Juice of 1 lime
- 2 tomatoes, seeded and chopped
- Salt
- 16 corn tortillas or 12 6-inch flour tortillas
- 4 tablespoons butter
- 3 tablespoons flour
- 2 1/2 cups milk
- 3 cups Monterey Jack cheese or a combo of Monterey and Pepper Jack
- 1 4-ounce tin diced green chilies, well drained
- Garnishes: chopped or shredded iceberg lettuce or Romaine hearts; diced avocado dressed with lime juice; seeded, diced tomatoes; chopped red onion or scallions; crème fraiche, Mexican crema or sour cream, for dolloping.

- Sweet Lime-Cilantro Dressing:
- 1 head Napa cabbage, shredded
- 1 head red cabbage, shredded
- 1 large cucumber, julienned
- One 10-ounce bag shelled edamame, cooked
- 2 carrots, peeled and grated
- 2 green onions, finely sliced
- 2 cups olive oil
- 1 1/2 cups finely chopped fresh cilantro
- 1 cup sugar
- 2 cloves garlic, minced
- Juice of 2 limes
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1 avocado, peeled and finely sliced
