World's Best Lasagna

Directions: In a Dutch oven, cook sausage, ground beef, onion, and garlic over medium heat until well browned
- 1 pound sweet Italian sausage
- 3/4 pound lean ground beef
- 1/2 cup minced onion
- 2 cloves garlic, crushed
- 1 (28 ounce) can crushed tomatoes
- 2 (6 ounce) cans tomato paste
- 2 (6.5 ounce) cans canned tomato sauce
- 1/2 cup water
- 2 tablespoons white sugar
- 1 1/2 teaspoons dried basil leaves
- 1/2 teaspoon fennel seeds
- 1 teaspoon Italian seasoning
- 1 tablespoon salt
- 1/4 teaspoon ground black pepper
- 4 tablespoons chopped fresh parsley
- 12 lasagna noodles
- 16 ounces ricotta cheese
- 1 egg
- 1/2 teaspoon salt
- 3/4 pound mozzarella cheese, sliced
- 3/4 cup grated Parmesan cheese
Olive and Cheese Loaf

In a medium bowl, stir together flour, salt, and yeast; stir in cheese and olives
- 3 cups bread flour, plus more for work surface
- 1 teaspoon fine sea salt
- 3/4 teaspoon instant or active-dry yeast
- 1 3/4 cups 1/2-inch cubes aged Gruyere cheese
- 1 1/2 cups pitted 1/4-inch-thick slices green Spanish olives
- 1 1/2 cups cool water (55 to 65 degrees), plus more as needed

- 4 T. salt (only 1 time)
- 3 T. lemon juice
- 1 bag Zatarain's crab boil seasoning
- 1 T. Zatarain's liquid crab boil seasoning

Guy's Texas Chili

I left out all the peppers except the red bell pepper and it was a very flavorful chili in spite of this omission
- 2 dried chile de arbol peppers
- 2 dried ancho chile peppers
- 2 dried guajillo chile peppers
- 2 tablespoons extra-virgin olive oil
- 1 medium sweet onion, diced
- 4 cloves garlic, minced
- 1 red bell pepper, seeded and diced
- 1 Fresno chile pepper, seeded and minced
- 2 Anaheim chile peppers, seeded and diced
- 1 1/2 pounds beef chuck roast, cut into 1/2-inch cubes
- 1 1/2 pounds ground beef (80% lean)
- 2 tablespoons all-purpose flour
- 3 tablespoons chili powder
- 2 tablespoons ground cumin
- 1/2 teaspoon freshly ground black pepper
- Pinch of cayenne pepper
- 1 12 -ounce bottle Mexican beer
- 1 1/2 quarts low-sodium beef stock
- 1 tablespoon kosher salt
- 1/4 cup chopped cilantro
Creamy Avocado-Cilantro Dip

Cilantro Lime Salsa

- 1 can fresh cut diced tomatoes
- 1 can Ro-Tell tomatoes and green chiles
- 1 teaspoon cilantro
- juice of one lime
- one bunch green onions chopped
- 2 dashes of Tabasco
- 1 clove garlic
- 1 tablespoon vegetable oil (optional)
- salt to taste

- 1/2 to 1 tablespoon cinnamon
