Cherry Cake Pudding

Preheat oven to 325 degrees
- Sauce:
- Cake
- 1 cup Sugar
- 2 Tablespoons Butter, Softened
- 1 whole Egg
- 1 cup All-purpose Flour
- 1 teaspoon Baking Powder
- 1/8 teaspoons Salt
- 1/2 cups Whole Milk
- 1 can (15 Ounces) Cherries In Syrup (NOT Cherry Pie Filling) Drained, Juice Reserved
- 1/2 cups Pecans, Finely Chopped
- 1 cup Juice From Cherries (add Water To Make 1 Cup If Necessary)
- 1 cup Sugar
- 1 Tablespoon All-purpose Flour
- 1 Tablespoon Butter
- 1/2 teaspoons Vanilla Extract
- Unsweetened Freshly Whipped Cream
Mandarin-Berry Salad

1. In a large bowl combine greens, strawberries, onions, noodles, and almonds; set aside
- 6 cups torn mixed salad greens
- 1 cup fresh strawberries, hulled and quartered
- 1/2 cup sliced green onions
- 1/2 cup canned rice noodles
- 1/4 cup sliced almonds, toasted
- 1 11-ounce can mandarin orange sections, drained
- 1/4 cup flaked coconut
- 2 teaspoons honey
- 2 teaspoons salad oil
- 2 teaspoons balsamic vinegar
- 1/2 teaspoon ground ginger
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 2 ounces semisoft goat cheese, crumbled
Coconut Ice Cream

1. Combine the milk and cream of coconut in the container of a food processor or blender, and mix thoroughly
- Optional ingredients:
- 1 cup milk
- 1 (14 ounce) can cream of coconut
- 1 1/2 cups heavy cream
- 1 1/2 cups (or less) sweetened flaked coconut (optional) (Process to make it smaller)
- 1 tsp coconut extract (or vanilla)
- Fudge sauce and toasted slivered almonds on top
- Mango juice, crushed pineapple, banana added at end of mixing process
- Toasted coconut for top

- TOPPING:
- 1 package (1/4 ounce) active dry yeast
- 1/3 cup sugar, divided
- 1-1/2 cups warm water (110° to 115°), divided
- 1/2 cup butter, softened
- 2 eggs
- 1/4 cup nonfat dry milk powder
- 1 teaspoon salt
- 5 to 5-1/2 cups all-purpose flour
- 1/2 cup chopped pecans
- 1 cup packed brown sugar
- 3 tablespoons cornstarch
- 2 teaspoons ground cinnamon
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 3/4 cup butter, melted
White Bean Chicken Chili

Prep: 35 min. Cook: 3 hours Sprinkle chicken with salt and pepper
- 3 * 3 boneless skinless chicken breasts, cubed
- 1 * 1 teaspoon salt
- 1/2 * 1/2 teaspoon pepper
- 1 * 1 medium onion, chopped
- 1 * 1 jalapeno pepper, seeded and chopped
- 1 * 1 can diced green chilies
- 3 * 3 teaspoons dried oregano
- 2 * 2 teaspoon ground cumin
- 3 * 3 tablespoons olive oil
- 4 * 4 garlic cloves, minced
- 4 * 4 cans (15 ounces each) white kidney or cannellini beans, rinsed and drained, divided
- 4-5 * 4-5 cups chicken broth, divided
- 1 * 1 cup shredded cheddar cheese
- 1 * 1 cup Monterey Jack (or pepper jack) cheese
- * Sour cream and minced fresh cilantro, optional
Grilled Chicken and Quinoa Burrito Bowls with Avocado Salsa

*Rinse quinoa under water in a sieve if it's not listed on the package that it's pre-rinsed
- 1 1/2 cups dry quinoa*
- 3 cups low-sodium chicken broth
- 1 Tbsp ancho chili powder
- 1 1/2 tsp ground cumin
- 1/4 tsp garlic powder
- Salt and freshly ground black pepper
- 1 1/2 lbs boneless skinless chicken breasts
- 1 1/2 Tbsp olive oil
- 1 2/3 cups frozen corn , warmed (optional)
- 1 (14.5 oz) can black beans, warmed along with liquid from the can then drained (optional)
- Mexican blend cheese or queso fresco (optional)
- Plain Greek yogurt or light sour cream (optional)
- Avocado salsa
- 3 medium roma tomatoes , diced
- 1 1/2 medium avocados , diced
- 1/2 cup chopped red onion , rinsed
- 1 jalapeño , seeded for less heat if desired and minced**
- 1 clove garlic , minced
- 2 Tbsp fresh lime juice
- 2 Tbsp olive oil
- 1/4 cup finely chopped cilantro
