- (could use a different topping like a raspberry sauce)
Gingery Pork Meatballs with Noodles

1. Place a foil-lined jelly-roll pan in oven
- Meatballs:
- 1/2 cup chopped fresh cilantro
- 1/4 cup dry breadcrumbs
- 1/4 cup finely chopped red onion
- 2 tablespoons lower-sodium soy sauce
- 2 teaspoons grated peeled fresh ginger
- 3 garlic cloves, minced
- 1 pound lean ground pork
- 1 large egg, lightly beaten
- Noodles:
- 8 ounces uncooked wide rice noodles
- 1 tablespoon dark sesame oil
- 1 cup red bell pepper strips
- 1 cup julienne-cut snow peas
- 1/2 teaspoon salt
- 1/2 teaspoon crushed red pepper
- 1/2 cup thinly sliced green onions

- 1 medium firm banana, sliced

Orzo beef skillet

Heat a large skillet over medium-high heat
- 1 pound ground beef
- 1/2 a large yellow onion, chopped
- 2 cloves garlic, minced
- 1 (14.5 ounce) can diced tomatoes with their juice
- 1/2 cup chicken or beef broth
- 1/2 cup water
- 8 ounces orzo
- 1/2 teaspoon Italian seasoning
- Salt and pepper
- 4 cups chopped kale or baby spinach
- 1/2 cup grated Parmesan cheese

Add all ingredients to a large saucepan or pot over medium-high heat and stir to combine
- 2 15-ounce (425 g) cans pumpkin puree (not pumpkin pie filling)
- 2/3 cup (128 g) coconut sugar or muscovado sugar (or sub organic brown sugar)
- 1/4 cup (60 ml) maple syrup (Grade A is best)
- 1/2 cup (120 ml) pure unsweetened apple juice
- 1/2 lemon, juiced (1 Tbsp or 15 ml)
- 2 1/2 tsp pumpkin pie spice*
- 1/2 tsp ground cinnamon
- pinch sea salt
- Pumpkin pie spice: 2 tsp cinnamon, 2 tsp ginger, 1 tsp nutmeg, 1/2 tsp cloves

- 1 pound penne rigate (ridged penne)

- 1/2 cup fresh flat-leaf parsley leaves (a few handfuls) chopped
