PECAN PRALINE CAKE

Position rack in center of oven and preheat to 350 degrees
- SYRUP:
- 2-1/2 cups cake flour
- 1-1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup (2 sticks) unsalted butter room temperature
- 2 cups sugar
- 4 large eggs
- 2 teaspoons vanilla extract
- 1 cup whole milk
- 1-1/2 cups chopped pecans
- 3 tablespoons water
- 3 tablespoons sugar
- 1 tablespoon bourbon
- VANILLA CREAM CHEESE FROSTING:
- 12 oz. cream cheese at room temperature
- 1/2 cup (1 stick) unsalted butter at room temperature 2 teaspoons vanilla extract
- 4 cups powdered sugar
- PECAN PRALINE TOPPING:
- 1 large egg white
- 1 tablespoon water
- 1/2 cup packed golden brown sugar
- 1-1/2 cups pecan halves
MISSISSIPPI MUD CAKE

Spoon batter into 2 greased and floured aluminum foil-lined 9x9x2” square pans
- Chocolate Velvet Cake Batter
- 4 cups miniature marshmallows
- 2 cups toasted chopped pecans
- 1/2 cup butter or margarine
- 1/3 cup milk
- 3 tablespoons cocoa
- 1 (16 oz.) package powdered sugar sifted
- 1 teaspoon vanilla extract
SPAGHETTI PIZZA

Cook spaghetti and drain. Grease 9x13 pan
- 1 (7 oz.) package spaghetti
- 2 eggs
- 1/2 cup milk
- 8 oz. shredded cheddar cheese
- 1 lb. hamburger
- 1 onion diced
- 1 teaspoon oregano
- 1 (32 oz.) jar spaghetti sauce with green peppers and mushrooms
- 8 oz. shredded mozzarella cheese
FUDGE MICROWAVE

Microwave on high for 3 minutes the first 4 ingredients
- 6 oz. semisweet chocolate chips
- 6 oz. butterscotch chips
- 1/2 stick butter
- 3/4 cup peanut butter
- 8 oz. salted peanuts
- 2 cups miniature marshmallows
PIZZA DOUGH

In small bowl, combine the yeast and sugar
- 1 tablespoon dry yeast
- 1 tablespoon sugar
- 1-1/2 cups lukewarm water (105-115 degrees)
- 3-1/4 cups flour preferable bread flour
- 1/2 teaspoon salt
- 1/4 cup olive oil
CHOCOLATE GANACHE

Microwave semisweet chocolate morsels and whipping cream in a 2 quart microwave-safe bowl at medium 2-1/2-3 minutes...
- 1 (12 oz.) package semisweet chocolate morsels
- 1/2 cup whipping cream
- 3 tablespoon butter
BISCOTTI

- 1/2 cup vegetable oil
- 3 eggs
- 1 cup sugar
- 1 tablespoon anise extract
- 3-1/4 cups all purpose flour
- 1 tablespoon baking powder
TOASTED COCONUT MARSHMALLOWS

BEEF WELLINGTON

- 1-1/2 lbs. sliced button mushrooms
- 3 tablespoons butter, divided
- 1/4 cup duck or liver pate
- 1 tablespoon chopped fresh thyme plus 5 sprigs for garnish
- 5 frozen puff pastry shells
- 1 tablespoon canola oil
- 6 4 oz. filet mignon steaks
- Coarse kosher salt
- 2- 5 ounce bags fresh baby spinach
- 2 tablespoons balsamic vinegar
- 1 teaspoon Dijon mustard
- 1/2 cup extra virgin olive oil
- 3 garlic cloves, pressed
- 2 teaspoons finely chopped fresh thyme
- 1 teaspoons finely chopped fresh basil
- 2 large red onions, halved, thinly sliced
- 1 yellow bell pepper, cut into 1/2" wide strips
- 1 ted bell pepper, cut into 1/2" wide strips
- 1 - 1 lb. eggplant quartered lengthwise, cut crosswise into 1/2" slices
- 1/2 lb. yellow squash (about 2)cut into 1/2" thick

- 1/2 lb. zucchini (about 2 medium) cut into 1/2" thick rounds

POTATOES WITH BACON AND ONION

Bring potatoes, stock, garlic, bay leaf, thyme, tomato, and a pinch of salt to a boil in medium saucepan
- 2-1/2 pounds potatoes, peeled
- 4 cups chicken stock
- 1 garlic clove
- 1 dried bay leaf
- 6 stems thyme
- 1 plum tomato. cut into large pieces
- Coarse salt
- Ground pepper
- 6 ounces sliced bacon cut into 1/2" pieces
- 1/2 medium onion, thinly sliced
