CHOCOLATE MINT CHIP COOKIES

Place chocolate in top of a double boiler, bring water to a boil
- 2 (1 oz.) squares unsweetened chocolate 1/2 cup butter or margarine softened
- 1 cup sugar
- 2 egg
- 1/2 teaspoon vanilla extract
- 2 cups all purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 6 oz. mint chips cut into small pieces
MARINADE BASIC

Combine ingredients and use with beef, pork or chicken
- 1/4 cup red wine vinegar
- 2 tablespoons vegetable oil
- 2 tablespoons soy sauce
- 2 tablespoons catsup
- 1/4 teaspoon onion salt
- Garlic powder to taste
- Black pepper to taste
FRESH STRAWBERRY GRANITA

Stir first 3 ingredients in small bowl until sugar dissolves
- 1 cup hot water
- 3/4 cup sugar
- 2 tablespoons fresh lemon juice
- 3 cups sliced hulled strawberries
CORN RELISH

Combine all ingredients in nonreactive pot
- 4 cups fresh corn (9 ears)
- 3 cups seeded diced red tomatoes
- 1-1/2 cups green pepper
- 1/4 cup red pepper
- 1 cup chopped onions
- 1/2 cup sugar
- 2 cups cider vinegar
- 1 tablespoon pickling salt
- 2 teaspoons yellow mustard
CHOCOLATE CRUNCH MOUSSE CAKE

Line bottom of 8” springform pan with parchment paper
- Crust and Garnish:
- 5 oz. bittersweet or semisweet chocolate chopped
- 1 cup rice krispies cereal
- 1/3 cup finely chopped walnuts
- Mousse:
- 9 oz. bittersweet ot semisweet chocolate chopped
- 1/2 cup unsalted butter cut up
- 4 eggs
- 1/4 cup sugar
- Topping:
- 1/2 cup whipping cream
- 2 teaspoons sugar
JELLO CREEPY JIGGLERS

Using paper towel dipped in vegetable oil, lightly wipe inside of molds
- Vegetable oil or non-stick coking spray
- 1-1/4 cups boiling water
- 2 packages (4 serving) Jello any flavor
WHITE CHOCOLATE MACADAMIA NUT PIE

Place chocolate chips in a metal mixing bowl
- Ganache:
- 3/4 cup semisweet chocolate chips
- 1/2 cup heavy cream
- Filling:
- 6 1/2 ounces cream cheese, softened
- 1/3 cup sugar
- 1/3 cup heavy cream, plus 3/4 cup, whipped soft
- 6 1/2 (1-ounce) squares premium white baking chocolate, melted
- 1/2 teaspoon orange zest
- 2/3 cup roasted, chopped macadamia nuts
- 1 pre-baked deep-dish (9-inch) pie shell
- Garnish:
- 1 1/2 cups heavy cream
- 1/4 cup confectioners' sugar
- 1 to 2 ounces chopped macadamia nuts
PECAN TARTLETS

Preheat oven to 350 degrees
- Cream Cheese Pastry:
- 1 cup unsifted all purpose flour
- 1/2 (1 stick) unsalted butter, slightly softened
- 1 package (3 oz.) cream cheese softened
- 1/4 teaspoon salt
- Pecan Filling:
- 1 egg slightly beaten
- 1/2 cup light corn syrup
- 1/3 cup firmly packed dark brown sugar
- 2 tablespoons unsalted butter, melted
- 1 teaspoon vanilla
- Pinch salt
- 1 cup coarsely broken pecans
CHOCOLATE CHIP ICE CREAM PIE

- 1/2 cup chocolate syrup
- 1/3 cup semisweet chocolate chips
- 2 cups crisp rice cereal
- 1/4 cup sour cream
- 1 quart chocolate chip ice cream softened
BRAISED BABY ONIONS WITH ORANGE JUICE AND BALSAMIC VINEGAR

- 2 lbs. fresh small cipolline onions or pearl onions
- 1/4 cup extra virgin olive oil
- 3/4 cup fresh orange juice
- 3/4 cup balsamic vinegar
