FOR LEMON CURD: Combine first 5 ingredients in heavy medium saucepan

  • LEMON SYRUP:
  • 1-1/3 cups sugar
  • 3/4 cup (1-1/2 sticks) unsalted butter cut into 1/2” cubes
  • 2/3 cup fresh lemon juice
  • 1 tablespoon grated lemon peel
  • 1/8 teaspoon salt
  • 5 large eggs, beaten to blend
  • 1 cup water
  • 1 cup sugar
  • 1/3 cup fresh lemon juice
  • 1 tablespoon (packed grated lemon peel)
  • Combine all ingredients in small saucepan.
  • Bring to boil, stirring until sugar dissolves.
  • Reduce heat and simmer 5 minutes. Cool.
  • FILLING:
  • 1 (8 oz.) package cream cheese room temperature
  • 3/4 cup sugar
  • 2-1/4 cups chilled heavy whipping cream
  • 1/4 teaspoon vanilla extract
