BRUNCH EGG BAKE

In large bowl, lightly toss cheeses together
- 3 cups shredded Cheddar cheese
- 3 cups shredded Mozzarella cheese
- 4.5 ounce jar sliced mushrooms, drained
- 1/3 cup sliced green onions
- 1/2 medium red bell pepper chopped
- 1/4 cup margarine or butter, melted
- 8 oz. cooked ham cut into cubes or 4 ounces of crumbled bacon
- 1/2 cup all-purpose flour
- 1-3/4 cup milk
- 8 eggs beaten
QUICK DILL PICKLES

Cut cucumbers into 1” square chunks, and place in heat proof bowl with 12-15 springs dill
- 6 Kirby cucumbers
- 1 small bunch fresh dill
- 12 whole black peppercorns
- 1 cup white-wine vinegar
- 1 teaspoon salt
- 1/4 cup sugar
- 1 garlic clove thinly sliced
SWEET POTATO CHOCOLATE BARS WITH SPICED CREAM

Preheat the oven to 375 degrees
- 1-1/2 lbs. medium size sweet potatoes
- 1 tablespoon vegetable oil
- 3/4 cup firmly packed light brown sugar
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon freshly grated nutmeg
- pinch salt
- 1 teaspoon pure vanilla extract
- 3 large eggs
- 3 cups milk
- 2-1/2 cups graham cracker crumbs
- 2 cups pecan pieces
- 3/4 cup (1-1/2 sticks) unsalted butter melted
- 8 oz. semisweet chocolate morsels
- powdered sugar
CHICKEN PAPRIKA

Melt shortening and add chopped onions and simmer until soft
- Dumplings:
- 3 tablespoons shortening
- 2 medium onions chopped
- 2 tablespoons Hungarian paprika
- Salt and pepper
- 3 pounds chicken parts
- 1 pint sour cream
- 1-2 teaspoons flour
- 2 cups flour
- 4 large eggs
- 1/4 to 1/2 cups cold water
ZEPPOLE

Cut open the vanilla beah lengthwise
- 1 vanilla bean
- 1/2 cup sugar plus 3 tablespoons
- 2 tablespoons ground cinnamon
- 1 stick butter
- 1/4 teaspoon salt
- 1 cup water
- 1 cup all purpose four
- 4 eggs
- olive oil for frying
BREAD WHITE

Sprinkle yest over 1/2 cup water
- 1 tablespoon plus 1-1/2 teaspoon dry yeast
- 2-1/4 cups warm water (110 degrees)
- 3 tablespoons plus 2 teaspoons honey
- 4 tablespoon unsalted butter, melted, plus more for bowl, pans and brushing
- 7 cups all purpose flour, plus more for surface and dusting
- 2 tablespoons coarse salt
LEMON CURD AND BLUEBERRY TRIFLE

FOR LEMON CURD: Combine first 5 ingredients in heavy medium saucepan
- LEMON SYRUP:
- 1-1/3 cups sugar
- 3/4 cup (1-1/2 sticks) unsalted butter cut into 1/2” cubes
- 2/3 cup fresh lemon juice
- 1 tablespoon grated lemon peel
- 1/8 teaspoon salt
- 5 large eggs, beaten to blend
- 1 cup water
- 1 cup sugar
- 1/3 cup fresh lemon juice
- 1 tablespoon (packed grated lemon peel)
- Combine all ingredients in small saucepan.
- Bring to boil, stirring until sugar dissolves.
- Reduce heat and simmer 5 minutes. Cool.
- FILLING:
- 1 (8 oz.) package cream cheese room temperature
- 3/4 cup sugar
- 2-1/4 cups chilled heavy whipping cream
- 1/4 teaspoon vanilla extract
GRILLED RED ONIONS

Insert 4 wooden skewers (1 at a time) through each onion about 1/2” apart to create horizontal segments
- 12 (8”) wooden skewers
- 3 medium red or sweet onions
- 1-1/2 cups dry white wine
- 2-4 tablespoons butter or margarine melted
- 1 teaspoon chopped fresh thyme
- 1/8 teaspoon pepper
CHICKEN PIZZAIOLA

In a large fry pan with a tight fitting lid, brown chicken in oil on both sides, seasoning with salt and pepper
- 1-1/2 lbs. chicken breast boneless and skinless
- 1/4 cup olive oil
- salt and pepper
- 1 teaspoon oregano
- 1/2 teaspoon parsley
- 28 oz. can plum tomatoes, crushed
- 2 each garlic cloves, sliced
LEMON MERINGUE PIE

Preheat oven to 350 degrees
- 1 cup white sugar
- 2 tablespoons all purpose flour
- 3 tablespoons cornstarch
- 1/4 teaspoon salt
- 1-1/4 cups water
- 1/2 cup lemon juice, zest from 2 lemons
- 2 tablespoons butter
- 4 egg yolks, beaten
- 1 9" pie crust baked
- 4 egg whites
- 6 tablespoons white sugar
