PIZZA DOUGH

In a small bowl, dissolve the yeast and honey in 1/4-cup warm water
- 1 package active dry or fresh yeast
- 1 teaspoon honey
- 1 cup warm water, 105 to 115 degrees
- 3 cups all-purpose flour
- 1 teaspoon kosher salt
- 1 tablespoons extra-virgin olive oil, plus additional for brushing
- Toppings of your choice
TEX-MEX SPICE MIX

Stir together all ingredients, and store in an airtight container up to 6 months
- 3 tablespoons chili powder
- 2 tablespoons ground cumin
- 1 tablespoons ground black pepper
- 1 tablespoon salt
- 1 tablespoon garlic powder
- 1-1/2 teaspoons ground red pepper
COLESLAW WITH BUTTERMILK DRESSING

Mix dressing ingredients in a medium-size serving bowl
- 3/4 cup buttermilk
- 2 tablespoons cider vinegar
- 1 teaspoon sugar
- 1/2 teaspoon each salt and freshly ground pepper
- 3 cups shredded green cabbage
- 3 cups shredded red cabbage
- 1 cup shredded carrots

- 4 large onions thinly sliced

- 1/2 cup balsamic vinegar
- 3 tablespoons honey
- Turkey:
- 3/4 stick butter at room temperature
- 1-1/2 tablespoons chopped fresh thyme
- 1 tablespoon chopped fresh rosemary
- One 21-22 lb. turkey
- 1 large onion quartered
- 4-1/2 cups chicken broth
- 2 large springs each of rosemary and thyme
- 1 bay leaf

- 8 oz. linguini
- 2 tablespoons butter
- 1 lb. shrimp cleaned and halved
- 1/2 cup olive oil
- 1/2 cup dry white wine
- 8 cloves garlic crushed
- 2 dashes soy sauce, do not over do but important
- 2 cups heavy cream
- salt and pepper
ASPARAGUS AND MUSHROOM TOSTADAS WITH MONTEREY JACK CHEESE

Snap off tough ends of asparagus spears
- 4 fresh asparagus spears
- 2 tablespoons chopped onion
- 2 tablespoons olive oil
- 1 garlic clove finely chopped
- 2 cups sliced crimini mushrooms or shitake
- 2 tablespoons white wine
- 1 teaspoons chopped fresh basil
- 1 teaspoon chopped fresh marjoram
- 1 teaspoon chopped fresh thyme
- 16 round tortilla chips
- 4 oz. Monterey Jack cheese
MEDITERRANEAN HERBED ROASTED CHICKEN

Heat oven to 375 degrees. Finely chop rosemary, garlic and salt together, place in small bowl
- 5 teaspoons chopped fresh rosemary
- 4 teaspoons chopped garlic
- 1/2 teaspoon salt
- 3 tablespoons lemon juice
- 1 tablespoon olive oil
- 1-1/2 teaspoons dried thyme
- 1/2 teaspoon dried savory or oregano
- 1/4 teaspoon pepper,
- 2 medium red potatoes cut in to 8 wedges each
- 2 medium onions cut into 1” wedges
- 1 whole chicken
- 1 red bell pepper cut into 1” pieces
- 1 medium zucchini halved lengthwise cut into 2” pieces

- 1 teaspoon baking powder
- 1-1/2 cups butter or margarine
- 1 cup sugar
- 1 package (3 oz.) jello, any flavor
- 1 egg
- 1 teaspoon vanilla
CAESAR POTATO SALAD WITH GRILLED RED ONION

- 3 anchovy fillets rolled with capers
- 2 garlic cloves coarsely chopped
- 3 tablespoons olive oil divided
- 2 tablespoons fresh lemon juice
- 2 teaspoons Dijon mustard
- 1 teaspoon hot pepper sauce
- 1/2 teaspoon Worcestershire sauce
- 1/3 cup mayonnaise
- 1 large red onion peeled
- 2 lbs. red-skinned baby potatoes
