CHICKEN IN FOIL

Cut 4 24" x 18" pieces of heavy duty aluminum foil
- 1 2-1/2 lb. fryer skinned and quartered
- 1/4 teaspoon garlic salt
- 1/8 teaspoon salt
- 1 large onion cut into 4 slices
- 1 large potato cut into 8 slices
- 2 carrots peeled and cut into 3/4" pieces
- 2 stalks celery cut into 3/4" pieces
- 1 4 oz. can sliced mushrooms drained
- 2 cans cream of mushroom soup undiluted
SORRENTO CASSATA CAKE

Make cake in two 9” cake pans, following directions on box, but substituting 3 large eggs for egg whites
- Syrup:
- 1 white cake mix
- 2-1/2 cups ricotta cheese
- 1 cup confectioners sugar
- 1 tablespoon rum or vanilla extract
- 4 oz. finely chopped chocolate
- 1/2 cup maraschino cherries rinsed dried and chopped 1/3 cup seedless raspberry jam
- 1/4 cup granulated sugar dissolved in 1/4 cup boiling water
- 2 tablespoons rum or vanilla extract
- Topping:
- 2 cups heavy cream whipped with 1/2 cup confectioners sugar
AMARETTO COOKIES

Finely grind blanched almonds, in batches, using blender or food processor
- 1/2 lb. blanched almonds
- 4 drops bitter almond oil
- 1/4 cup sugar
- 2 egg whites
- 1 tablespoon confectioners sugar
DIP HOT BACON CHEESE

Cut lengthwise slice from top of bread loaf, remove center, leaving 1” thick shell
- 1 loaf (16 oz.) round bread
- 12 slices bacon crisply cooked and crumbled
- 1 8 oz. package colby/monterey jack cheese
- 1 cup (4 oz.) grated Parmesan cheese
- 1 cup mayonnaise
- 1 small onion finely chopped
- 1 clove garlic minced
REFRIGERATOR POTATO ROLLS

Cook potatoes in boiling water to cover 10 minutes or until tender
- 2 medium potatoes peeled and chopped
- 1 package dry yeast
- 1 cup warm water (105 -115 degrees)
- 3/4 cup sugar
- 1/2 cup butter
- 1/2 cup shortening
- 1-1/2 teaspoons salt
- 7 about 7 cups all-purpose flour
CHOCOLATE CHIP ICE CREAM PIE

Begin by coating a 9" pie pan with cooking spray
- 1-1/2 cups crushed chocolate thin bits
- 1 quart vanilla ice cream
- 1/2 cup semisweet chocolate pieces
- 1/4 cup chocolate syrup
- Few dabs of cool whip
- 1 stick margarine
- Cooking spray
CLAM CHOWDER

In large pot, cook celery about 15 minutes in clam juice
- 3 cans clams, juice reserved
- 2 cups diced celery
- 1 large onion chopped
- 4-5 potatoes, cut into small cubes
- 4 cups milk or half and half, divided
- 1/4 lb. butter or more to taste
- 8 tablespoons flour
PECAN BALLS

In large bowl, combine all ingredients except confectioners sugar
- 1 cup sifted all-purpose flour
- 1/2 cup soft butter or margarine
- 1 cup finely chopped pecans
- 2 tablespoons granulated sugar
- 1/8 teaspoon salt
- 1 teaspoon vanilla
- Confectioner's sugar
CORN MAQUE CHOUX

Melt butter in large skillet over medium-high heat
- 2 tablespoons (1/4 stick) butter
- 1 cup finely chopped onion
- 1/2 cup chopped red bell pepper
- 2 cups fresh corn kernels
- 3/4 cup heavy whipping cream
- 1 teaspoon chopped fresh thyme
- 1/2 teaspoon (or more) hot pepper sauce
- 1 green onion, finely chopped
- 1 tablespoon chopped fresh basil
- Coarse kosher salt
PORTOBELLO MUSHROOM FRIES

Preheat grill pan over medium high to high heat
- 4 large portobello mushroom caps
- Olive oil for drizzling
- plus 1/4 cup steak seasoning blend such as Montreal
- or salt and black pepper
- 2 eggs beaten
- 1/4 cup flat leaf parsley chopped
- 1 cup Italian bread crumbs
- 1/2 cup shredded or grated Parmesan cheese
