SUPER CRISPY FRIED CHICKEN

Combine milk and egg in bowl
- 1/2 cup milk
- 1 egg slightly beaten
- 1 cup all-purpose flour
- 2 teaspoon garlic salt
- 1 teaspoon paprika
- 1 teaspoon black pepper
- 1/2 teaspoon poultry seasoning
- 1 frying chicken cut up
- Shortening for frying
APPLE PIELETS

Stir together apples, 1/4 cup sugar, the cream, cornstarch, nutmeg and cinnamon, set aside
- 1-1/2 cups chopped apples
- Sugar
- 1 tablespoon cream
- 2 teaspoon cornstarch
- Dash each of nutmeg, cinnamon
- 1 recipe cream cheese pastry
- 1 egg yolk beaten with 1 teaspoon milk
CHICKEN YAKITORI KABOBS

Teriyaki Sauce: Combine soy sauce, sugar, ginger, garlic and jam in bowl
- Teiryaki Sauce:
- 1/4 cup soy sauce
- 1/4 cup firmly packed brown sugar
- 1/2 teaspoon ground ginger
- 2 cloves garlic pressed
- 2 teaspoons apricot jam
- 2 whole chicken breasts, skinned and bones
- 8 green onions cut into 1" pieces
HONEY GLAZED GRILLED CHICKEN

Heat grill. In small bowl whisk honey, soy sauce and garlic blend well
- 1/4 cup honey
- 2 tablespoons soy sauce
- 4 garlic cloves minced
- 3-3 -1/2 lb. cut-up frying chicken
- 2 tablespoons olive oil or vegetable oil
- 1/4 teaspoons salt
- 1/4 teaspoon coarse ground black pepper
ONION AND BACON DIP

Cook bacon until crisp. Remove all but 2 tablespoons bacon grease from skillet
- 6-8 strips bacon
- 2 tablespoons butter
- 1 medium sweet onion chopped
- 1 medium red onion chopped
- 2 tablespoons dark corn syrup
- 1 tablespoon red wine vinegar
- 1 cup sour cream
- 1 8 oz. package cream cheese softened
- 2 cups shredded Monterrey Jack cheese
- 1/4 cup diced green onions
SPICE CRISPS

Preheat oven to 375 degrees
- 3/4 cup light flavored molasses
- 2/3 cup packed brown sugar
- 1/2 cup shortening
- 2 teaspoons ground cinnamon
- 1 teaspoon ground ginger
- 1 teaspoon ground cardamon
- 1 teaspoon ground cloves
- 3/4 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup whole wheat flour
- 1-1/4 cup all purpose flour
- 1 teaspoon finely shredded lemon peel
BERRY TARTS

Whip cream, then fold half into pastry cream, refrigerate
- PASTRY CREAM:
- 1 cup heavy cream
- Pastry cream chilled
- 1 cup raspberry jelly
- 1 tablespoon cherry or orange liqueur
- 3 " tart shells
- Small strawberries
- 2 cups milk
- 4 egg yolks
- 1/3 cup flour
- Pinch of salt
- 1 tablespoon butter or margarine

PORK CHOPS WITH APPLE CREAM SAUCE

In large skillet heat 2 tablespoons butter over moderately high heat until foam subsides
- 3-1/2 tablespoons unsalted butter
- 4 one inch thick loin pork chops
- 3 Granny Smith apples
- 2 tablespoons firmly packed light brown sugar
- 2 tablespoons applejack of Calvados cheese
- 1/4 cup dry white wine
- 1/2 cup heavy cream
- 1/4 teaspoon celery salt
- 1/8 teaspoon crumbled dried sage
PEACH CUSTARD ICE CREAM WITH FRESH PEACH COMPOTE

ICE CREAM: Bring 1 cup cream, half and half, and 1/2 cup sugar just to simmer in medium saucepan
- CE CREAM:
- 1-1/2 cups whipping cream
- 1 cup half and half
- 3/4 cups sugar
- 5 large egg yolks
- 1 lb. peaches peeled sliced
- 1/4 cup light corn syrup
- 1/2 teaspoon vanilla extract
- COMPOTE:
- 4 large peaches peeled and sliced1/2 cup Essence (orange Muscat wine)
- 1/2 cup sugar
- 2 teaspoons fresh lemon juice
TARRAGON CHICKEN

In 6 uart dutch oven heat oil and 2 tablespoons margarine
- 4 whole boneless chicken breasts
- 2 tablespoons salad or olive oil
- 2 tablespoons margarine or butter
- 6 shallots chopped
- 2 pared carrots, sliced into 1/4" rounds
- 1/4 cup cognac or brandy
- 1 cup dry white wine
- tablespoons dried tarragon
- 1/2 teaspoon dried chervil leaves
- 1/2 teaspoon salt
- 1/8 teaspoon pepper
- 1 cup light cream
- 1 egg yolk
- 1 tablespoon flour
- 1/4 lb. mushrooms, cleaned and thinly sliced
- 2 tablespoons butter or margarine
