- 2 cup onions chopped
- 1 teaspoon salt
- 1/2 teaspoon oregano
- 3 cups cooked chicken, shredded
- 2 cups dairy sour cream
- 2-1/2 cups shredded cheddar cheese
- 15 flour tortillas
VIETNAMESE CHICKEN IN CARAMEL-GINGER SAUCE

Heat large skillet over medium-high heat unti hot
- 2 tablespoons vegetable oil
- 1-1/2 lbs. boneless skinless chicken thighs quartered
- 3 tablespoons minced fresh ginger
- 2 tablespoons chopped shallots or onion
- 1 tablespoon minced garlic
- 2 tablespoons fish sauce
- 2 tablespoons packed light brown sugar
- 1 tablespoon sugar
- 1/2 teaspoon salt
- 1/2 teaspoon freshly ground pepper
- 1/2-1 teaspoons crushed red pepper
- 1/4 cup water
- 1 cup diagonally sliced green onions 2 inches

- 1/2 cup brandy
SHRIMP CAJUN

Bring water and lemon to a boil, add shrimp, and cook 3-5 minutes or until shrimp turn pink
- 5 quarts water
- 1 large lemon, sliced
- 4 lbs. unpeeled fresh shrimp
- 2 cups vegetable oil
- 1/4 cup hot sauce
- 1 tablespoon minced garlic
- 1 tablespoon olive oil
- 1-1/2 teaspoon salt
- 1-1/2 teaspoons seafood seasoning
- 1-1/2 teaspoons dried basil
- 1-1/2 teaspoons dried oregano
- 1-1/2 teaspoons dried thyme
POTATOES WITH ROASTED GARLIC

Preheat oven to 400 degrees
- 1 head garlic, cut off 1/2 inch cut off top, coarse salt and freshly ground pepper
- 1 tablespoons plus 2 teaspoons extra virgin olive oil, plus more for drizzling and brushing
- 1-1/2 lbs. baby potatoes (about 18)
- 1/2 cup sour cream
- 1 teaspoon finely chopped fresh thyme
BACON APPETIZER CRESCENTS

- 8 slices bacon crisply cooked and crumbled

- 1 tbsp milk

KRISPY KREME BREAD PUDDING WITH BUTTER RUM SAUCE

- Butter Rum Sauce:
- 2 dozen Krispy Kreme donuts
- 1 can sweetened condensed milk
- 2 cans (4.5 ounce) fruit cocktail undrained
- 2 eggs beaten
- 1 (9 ounce) box raisins
- 1 pinch salt
- 1-2 teaspoons ground cinnamon
- Butter rum sauce
- 1 stick butter
- 1 pound box confectioners sugar
- Rum to taste
BASIC BUTTERMILK CAKE

Arrange rack at the middle of the oven and preheat to 350 degrees
- 3/4 cup (1-1/2 sticks) unsalted butter softened
- 1-1/2 cups granulated sugar
- 3 large eggs at room temperature
- 2 cups bleached all purpose flour
- 1 teaspoons baking powder
- 1 teaspoon baking soda
- 1 cup buttermilk at room temperature
