CHICKEN ROMANO

Combine breadcrumbs and cheese in shallow dish or pie plate
- 3 tablespoons salt-free seasoned dried breadcrumbs
- 3 tablespoons grated romano cheese
- 4 thin slliced boneless chicken cutlets
- 1 tablespoon olive oil divided
- 1 can diced tomatoes with Italian herbs liquid reserved
- 3 clkoves garlic peeled and crushed
- 2 tablespoons sliced pitted Kalamata olives
- 1 teaspoon balsamic vinegar
- 1/8 teaspoon red pepper flakes
- 3 tablespoons coarsely chopped fresh basil leaves

- 3/4 cup sugar
- 1/2 cup brown sugar
- 1 cup crushed vanilla wafers
- 1/4 cup milk
- 1/2 cup margarine
- 2/3 cup peanut butter
- 1 cup chocolate chips
- 1/2 cup chopped pecans
- 8 full graham crackers
PICADILLO

Heat oil in frying pan and add onions, saute until onions are golden but not black about 10 minutes
- 1 tablespoon olive oil
- 1 cup chopped onions
- 2 cloves garlic, crushed
- 1/2 green pepper diced
- 1 lb. ground beef
- 15 oz. can tomato sauce
- 1/4 cup green olives chopped
- 2 tablespoons worcestershire sauce
- 2 tablespoons white vinegar
- Salt and pepper to taste
CREAMY CHEDDAR SOUP

In a saucepan, saute onion and pimentos in butter for 5 to 7 minutes
- 1 small onion, diced
- 2 large pimentos, diced
- 3 tablespoons butter
- 3 tablespoons all-purpose flour
- 1 1/2 cups chicken stock
- 1 1/2 cups cream
- 3/4 cup grated sharp Cheddar
- 1/2 cup green onions
- Salt and black pepper
- Dash cayenne pepper, optional
- Suggested Serving: your favorite bread or croutons

- 1 eggplant sliced into quarters
- 1 cup olive oil plus 2 tablespoons
- Salt
- Freshly ground black pepper
- 4 cloves garlic
- 1 loaf French bread cut into 1” pieces
- 1/2 cup Parmesan cheese
- 2 red, yellow and 1 green pepper roasted peeled and cut into 2” pieces
- 5 Roma tomatoes halved
- 2 onion sliced
- 1/3 cup balsamic vinegar
- 24 large shrimp
- 4 wooden skewers soaked overnight
- Creole seasoning
- 1/4 cup basil leaves torn
- 1/4 cup fresh parsley chopped
DEVILED SWISS STEAK

In small bowl combine flour, mustard and pepper
- 2 tablespoons all-purpose flour
- 1 tablespoon dry mustard
- 1/2 teaspoon pepper
- 1-1/2 lbs. bottom round steak
- 2 tablespoons cooking oil

- 1 tablespoon Worcestershire sauce
- 1 teaspoon beef bouillon
- 2 (4 oz.) cans mushrooms

- 1 cup yellow onions
- 3/4 cup celery
- 3/4 cup scallions
- 1/4 cup creole mustard

- 2 tablespoons horseradish
- 2 tablespoons red wine vinegar
- 1 teaspoon worcestershire sauce
