POTATO GRUYERE GRATIN

Heat oven to 425 degrees. Grease a 3 quart gratin or other shallow baking dish
- 5 large baking potatoes (3 lbs.) peeled and thinly sliced
- 2 large red potatoes (1-1/2 lbs.) unpeeled, thinly sliced
- 1 teaspoon minced garlic
- 1 tablespoons fresh thyme leves chopped or 1 teaspoon dried
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 8 oz. Gruyere cheese (shredded) 2 cups
- 1 can 13-3/4 ounce chicken broth
- 2 tablespoon butter or margarine cut into small pieces
VANILLA BEAN ICE CREAM BASE

To make the vanilla ice cream: Combine the cream, milk, salt, and 2 cups of the sugar in a large pot
- Variations:
- 10 cups heavy cream
- 5 cups whole milk
- Pinch salt
- 3 cups sugar
- 3 vanilla beans
- 24 large egg yolks
- Chocolate-Chocolate Chunk Ice Cream:
- 3/4 cup whole milk
- 16 ounces semisweet chocolate, chopped in chunks
- Strawberry Cheese Cake Ice Cream:
- 1 1/2 cups strawberry preserves, no sugar added
- 1/2 frozen strawberry cheesecake, cut in large chunks
- 10 large fresh strawberries, halved
- Peanut Butter Cookie Dough Ice Cream:
- 1 tube ready to bake peanut butter cookie dough, cut in large pieces
ONION DIP CHUNKY

Combine first 4 ingredients, beat at medium speed of an electric mixer until smooth
- 2 (8 ounce) packages cream cheese, softened
- 2/3 cup chili sauce
- 1/3 cup mayonnaise
- 1/2 teaspoon Worcestershire sauce
- 2/3 cup finely chopped onion
LEMON MERINGUE PIE

In medium pan combine cornstarch, flour, 1-3/4 cups sugar and salt, mixing well
- Filling:
- 1/4 cup cornstarch
- 3 tablespoons flour
- 1-3/4 cups sugar
- 1/4 teaspoon salt
- 4 egg yolks, slightly beaten
- 1/2 cup lemon juice
- 1 tablespoon grated lemon peel
- 1 tablespoon butter
- Meringue:
- 4 egg whites
- 1/2 teaspoon cream of tartar
- 1/2 cup sugar
CHICKEN NUGGETS

In medium bowl stir flour, salt, pepper and baking powder
- 3/4 cup unsifted flour
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 teaspoon baking powder
- 3/4 cup beer, at room temperature
- 1/4 cups minced parsley
- 1/4 cup hot pepper sauce
- 2 cloves garlic minced
- 1 lb. chicken boneless breasts cut in 1" squares
THREE MILK CAKE WITH ROMPOPE

ROMPOPE SYRUP: Whisk all ingredients in medium bowl to blend
- ROMPOPE SYRUP:
- 1-1/2 cups rompope (Mexican eggnog liqueur) ,
- 1 cup evaporated milk
- 1 cup sweetened condensed milk
- 1 cup whipping cream
- CAKE:
- 5 large eggs
- 3/4 cup sugar
- 3/4 cup cake flour,
- 6 tablespoons (3/4 stick) unsalted butter, melted
- cooled to lukewarm
- FROSTING:
- 1-1/2 cups chilled whipping cream
- 3 tablespoons sugar
- 1 pint strawberries halved
- 1 pint strawberries hulled, sliced
LEMON LUSH

- 2 cups all purpose flour
- 1 cup butter, softened
- 2 (8 oz.) packages cream cheese
- 1 cup sugar
- 2 (3-4 ounce) packages instant lemon pudding mix
- 3-1/2 cups milk
- 1 12 oz. container cool whip thawed
TEX-MEX BAKE

Combine corn chips, egg and water in medium bowl
- 2 cups crushed corn chips
- 1 egg beaten
- 2 tablespoons water
- 1 envelope onion soup mix
- 1 can (4 oz.) chopped green chilies drained
- 1 lb. ground beef
- 1 cup shredded monterey jack cheese divided
- 1 can (8 oz.) tomato sauce
- 1 medium green bell pepper chopped
