CHICAGO ITALIAN BEEF SANDWICHES

Thinly slice cooked, roast beef and place in a dutch oven
- 2 lb. beef roast, leftover, pre-roasted
- roasting pan drippings
- 2 teaspoons fresh oregano finely chopped or 2 teaspoons dried oregano crushed
- 1 teaspoon fresh sweet basil finely chopped, or 1 teaspoon dried basil crushed
- 1 teaspoon whole black peppercorns
- 1/2 teaspoon red pepper ground (1/2 to 1)
- 1 teaspoon fresh parsley minced
- Salt to taste
- 3 cloves garlic minced
- 2 fresh green pepper seeded and sliced into 1/4” strips
MEXICAN HUSH PUPPIES

Combine first 4 ingredients in a large bowl
- 2 cups self-rising cornmeal
- 1 cup self-rising flour
- 1/2 teaspoon salt
- 3 tablespoons sugar
- 3 large eggs, lightly beaten
- 1 (16-1/2 ounce) can cream-style corn
- 1/2 cup milk
- 1-1/2 cups (6 ounces) shredded Cheddar cheese
- 1 large onion, chopped
- 2 jalapeno peppers, seeded and chopped
- Vegetable oil
ONION TART

Heat oil in pan. Slice onions thin
- 2 tablespoons olive oil
- 3 yellow or white onions
- 1 tablespoon garlic, chopped
- 2 springs thyme
- 3/4 teaspoon salt
- 1/4 teaspoon pepper
- 1 sheet puff pastry
- 1 cup Swiss cheese, grated
FUDGE SAUCE

Combine first 4 ingredients in a small saucepan
- 1/3 cup cocoa
- 1/4 cup water
- 1-1/2 cups light corn syrup
- Pinch of salt
- 1 tablespoon butter or margarine
- 1 teaspoon vanilla extract
FROZEN TROPICAL PARADISE

In saucepan combine eggs, milk and sugar
- 3 beaten eggs
- 1 cup milk
- 3/4 cup sugar
- 1-1/4 cups chopped fresh pineapple or one 20 ounce can crushed pineapple, well drained
- 1/2 cup toasted coconut
- 1 teaspoon vanilla
- 2 cups whipping cream
CHOCOLATE AND HAZELNUT MERINGUE CAKE

Preheat oven to 350 degrees
- 10 tablespoons unsalted butter plus more for pan
- all purpose flour for pan
- 1 cup hazelnuts (about 4 ounces)
- 3/4 cup firmly packed light brown sugar
- 6 large eggs separated
- plus 4 large egg whites
- 12 oz. bittersweet chocolate melted and cooled, plus 4 ounces roughly chopped (1 cup)
- 1 tablespoon pure vanilla extract
- 1 tablespoon rum (optional)
- pinch of salt
- 1 tablespoon cornstarch
- 1/4 teaspoon cream of tartar
- 1 cup superfine sugar
CHICKEN AND YELLOW RICE

Wash chicken pieces under cold running water,d rain well
- 2 roasting chickens, cut into 6 pieces each
- 2 teaspoons dried oregano
- 1/2 teaspoon pepper and salt
- 1/2 cup olive oil or salad oil
- 1 medium green pepper
- 2 cups chopped onions
- 1 clove garlic, crushed
- 1 bay leaf
- 1/8 - 1/4 teaspoon crushed red pepper
- 2 cups coverted raw rice
- 1 can (1 lb. 12 oz.) tomatoes
- 1 can chicken broth
- 1/2 package frozen green peas
- 1/2 cup pimento stuffed olives, sliced
- 1 teaspoon saffron threads
MUSHROOM-LEEK SOUP WITH BRIE CROUTONS

Melt butter in pot over medium high heat
- 1/2 stick butter
- 3 large leeks (white and pale green parts only thinly sliced 8 oz. shitake mushrooms stemmed, sliced,
- 8 oz. crimini mushrooms sliced
- 2 tablespoons all purpose flour
- 4 cups chicken stock
- 1 cup whipping cream
- 2 tablespoons dry Sherry
- 4 green onions sliced
- 12 1/4 ” thick slices French bread baguette
- 1/2 lb. Brie frozen rind removed cheese cut into 1/4” thick slices
- 2 tablespoons chopped fresh chives
CORNED BEEF

Combine salt, cracked peppercorns, allspice, thyme, paprika, sage and bay leaf in a bowl
- 1-1/2 cups coarse kosher salt
- 2 tablespoons cracked peppercorns
- 2 teaspoons ground allspice
- 2 teaspoons dried thyme
- 1 teaspoon paprika
- 1 teaspoon dried sage
- 1 teaspoon ground or crumbled bay leaf
- 1 full trimmed boneless 10-12 lb. top or bottom round of beef
TACO JOES

Cook ground chuck and onion in a skillet until meat is browned, stirring to crumble meat
- 1 lb. ground chuck
- 1 small onion chopped
- 3/4 cup taco sauce
- 1 tablespoons chili powder
- 2 teaspoons Worcestershire sauce
- 1/2 teaspoon alt
- 1.4 teaspoon garlic powder
- 8 hamburger buns
- 1 package sliced American cheese
