  • 4 cups hickory chips, soaked in water for 1 hour
  • 4 disposable mini aluminum loaf pans (for wood chips if using gas grill)
  • 2 11-3/4x8-1/2x1-3/4" disposable aluminum pans (for brisket)
  • Heavy duty aluminum foil
  • 1 dried Ancho chile, stemmed, seeded, coarsely torn
  • 2 tablespoons vegetable oil
  • 1 cup chopped onion
  • 1 tablespoon tomato paste
  • 3 garlic cloves, minced
  • 1/2 cup dry red wine
  • 1/2 cup ketchup
  • 1 tablespoon apple cider vinegar
  • 1 tablespoons (packed) dark brown sugar
