ROASTED PORK ENCHILADAS

Preheat oven to 400 degrees
- Roasted Pork:
- 2 cups chicken stock
- 1 cup sour cream
- 1 cup Salsa Verde
- Salt and pepper
- 1 recipe roasted pork and caramelized onion filling
- 12 corn tortillas
- 1 cup water
- 1 teaspoon olive oil
- 1/2 lb. shredded Monterey Jack
- 1 tablespoon chopped fresh cilantro leaves
- 1 - 5 -5-1/2 lb. pork butt, bone in untrimmed
- Salt
- Freshly ground black pepper
- 2 tablespoons olive oil
- 1 large onion thinly sliced
- 1/2 cup canned chopped green chilies
- 1/2 lb. Monterey Jack cheese
- Corn Tortillas:
- 2 cups corn flour
- 1 teaspoon salt
- 2 tablespoons lard
- 1-1/2 cups water
BUBBA’S COUNTRY FRIED STEAK

Combine 1-1/2 cups flour and 1/4 teaspoon of pepper in a small bowl
- 1-1/2 cups, plus tablespoons all-purpose flour
- 1/2 teaspoon freshly ground black pepper
- 8 (4-ounce) tenderized beef round cube steak
- 1 teaspoon house seasoning
- 1 teaspoon seasoning salt
- 3/4 cup vegetable oil
- 1-1/2 teaspoons salt
- 4 cups hot water
- 1/2 teaspoon monosodium glutamate
- 1 bunch green onions or 1 medium yellow onion, sliced.
CHIMICHURRI CHEESESTEAKS

Preheat outdoor grill to medium-high heat
- 2 cups packed fresh flat-leaf parsley leaves (about 2 bunches)
- 4 garlic cloves, chopped
- 1/4 cup lemon juice
- 2 tablespoons extra-virgin olive oil
- 1 3/4 teaspoons kosher salt
- 1 1/4 teaspoons freshly ground black pepper
- 4 cups thinly sliced sweet onion (about 2 onions)
- 2 tablespoons vegetable oil
- 1 1/2 pounds boneless chuck-eye steaks (3⁄4 to 1-inch thick)
- 4 (7 to 8-inch) hoagie rolls, split
- 1/4 pound thinly sliced provolone cheese
- Heavy-duty aluminum foil
CHEESE SOUP

Prepare garnish, with sharp knife cut 1 carrot and 1 celery stalk crosswise into thirds
- 3 medium carrots
- 3 medium celery stalks
- Butter or margarine
- 1 large onion
- 1 medium green pepper
- 3-13 oz. cans chicken broth
- 1 8-ounce package shredded sharp cheddar cheese
- 2 cups milk
MARINADE TOMATO-BASE

Combine ingredients and use with beef, lamb or chicken
- 1 - 8 oz. can tomato sauce
- 2 tablespoons lemon juice
- 1 tablespoon vegetable oil
- 2 teaspoons Worcestershire sauce
- 1/4 teaspoon basil or oregano
- 1/4 teaspoon onion salt
- Garlic powder to taste
- Black pepper to taste
CHUNKY APPLE CAKE WITH CREAM CHEESE FROSTING

Stir together first 4 ingredients in a large bowl until blended
- CREAM CHEESE FROSTING:
- 1/2 cup butter melted
- 2 cups sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 2 teaspoons ground cinnamon
- 4 Granny Smith apples peeled and sliced
- 1 cup chopped walnuts toasted
- cream cheese frosting
- additional toasted chopped walnuts
- 1 (8 oz.) pkg. cream cheese softened
- 3 tablespoons butter or margarine softened
- 1-1/2 cups powdered sugar
- 1/8 teaspoon salt
- 1 teaspoon vanilla extract
CITRUS CRANBERRY SAUCE

Remove the peel and pith from oranges with a paring knife, cut each section into quarters
- 2 large navel oranges
- 1 (12 oz.) package fresh cranberries picked over
- 3/4 cup sugar
- 1/4 cup water
- 1/8 teaspoon ground ginger
- 1/2 teaspoon fresh lemon juice
- 1/2 teaspoon fresh lime juice
HOUSE SEASONING

Mix ingredients together and store in an airtight container for up to 6 months
- 1 cup salt
- 1/4 cup black pepper
- 1/4 cup garlic powder
DANISH TWISTS

Roll pastry dough out on a lightly floured surface to a 20x12 inch rectangle
- 1/2 recipe Danish dough
- 1 egg, beaten
- 1/2 cup finely chopped almonds or pecans
- 2/3 cup granulated sugar
- 1/2 teaspoon cinnamon
- 1/3 cup slivered almonds
- 1/2 cup apricot preserves, heated
CHOCOLATE PIE

Separate egg yolks from whites
- FILLING:
- 1 - 9 inch baked pastry shell
- 3 eggs
- 3 cups milk
- 1 cup granulated sugar
- 1/3 cup all purpose flour
- 2 tablespoons unsweetened cocoa powder
- 1/2 teaspoon kosher salt
- 3 oz. unsweetened chocolate, finely chopped
- 3 tablespoons unsalted butter
- 2 teaspoons vanilla
- MERINGUE:
- 1/2 teaspoon vanilla
- 1/2 teaspoon cream of tartar
- 1/4 teaspoon kosher salt
- 6 tablespoons superfine granulated sugar
