In a large skillet, fry bacon until crisp and remove to paper towel saving drippings in skillet
- 4 strips bacon
- 2 green peppers
- 2 medium onions chopped
- 2 cups cooked rice
- 1 can (16 oz.) stewed tomatoes
- 1 cup tomato sauce
- 1 tablespoon tobasco sauce
- 1 lb. cooked shrimp
- Pepper to taste
- 1 tablespoon Parmesan cheese
BAKED TOMATO AND CHEESE

- 1 - 16 oz. can red tomatoes
- 1/2 teaspoon salt
- 2 tablespoons chopped onion
- 6 tablespoons bread crumbs
- 3/4 cup grated cheese

- 1 cup whole kernel corn
- 1/2 cup sliced ripe olives drained
- 1 package corn muffin mix
- 1 cup shredded cheddar cheese
- 1/2 cup diced green chilies
BURGER SAUCE

Combine all ingredients and cook over low heat several hours
- 1 large can tomato puree
- 1 large can diced tomatoes
- 1/2 can water, 2-1/2 tablespoons butter
- 2 tablespoons chopped onion
- Dash red pepper
- 1/8 teaspoon granulated garlic
- 1 tablespoon sugar
PECAN PIE COOKIES

Filling: Combine sugar, butter or margarine and corn syrup in saucepan, stir to blend

- 1/2 cup powdered sugar
- 1/4 cup butter or margarine
- 3 tablespoons dark corn syrup
- 1/2 cup chopped pecans

- 1 cup butter or margarine
- 1/2 cup sugar
- 1/2 cup dark corn syrup
- 2 eggs separated
- 2-1/2 cps unsifted all-purpose flour
CHICKEN BURRITOS

- 20 burrito size flour tortillas
- Onions and peppers cooked in butter or oil
- 28 oz. can crushed tomatoes
- 1 tablespoon chili powder
- 1/2 teaspoon dried oregano
- 1/4 teaspoon salt
- Pinch of ground cloves
- 8 oz. cheddar cheese
- Roasted chicken breasts or thighs
CHICKEN PAILLARD WITH LEMON BUTTER SAUCE

- 4 chicken breast halves
- Salt

- 1 tablespoon extra virgin olive oil
- 1 tablespoon unsalted butter
- 1/4 cup minced or sliced shallots

- 3/4 cup chicken stock
