COOKIE DOUGH ROLLED

Sift together flour, baking soda, and salt, set aside

BAKED DUTCH APPLE PIE

- 1 ready baked pie crust
- 1 large egg yolk slgithly beaten
- 5-1/2 cups sliced, cored, peeled, cooking applies
- 1 tablespoon lemon juice
- 1/2 cup sugar
- 1/4 cup light brown sugar firmly packed
- 3 tablespoon all-purpose flour
- 1/4 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 cup all purpose flour
- 1/4 cup sugar
- 1/4 light brown sugar firmly packed
- 1/3 cup butter or margarine at room temperature
TOMATO SAUCE

Combine 4 cups tomatoes and next 6 ingredients in large stockpot
- 12-1/2 lbs. red tomatoes, peeled, seeded, coarsely chopped (about 20 cups) divided
- 1 cup finely chopped shallots
- 1 tablespoon coarse kosher salt
- 1-1/2 teaspoons dried basil
- 1-1/2 teaspoons dried marjoram
- 1 teaspoon dried rosemary, crushed slightly
- 1/2 teaspoon ground black pepper
- Sugar (optional)
- 6 tablespoons bottled lemon juice
BEEF TERIYAKI

Heat oil and brown beef with onion and garlic
- 1 tablespoon oil
- 1 lb. beef chuck strips
- 1 cup onion slices
- 1 garlic clove, minced
- 3/4 teaspoon ground ginger
- 1 cup red and green pepper strips
- 2 cup bouillion
- 1-1/2 cups cooked rice
- 3 tablespoons soy sauce
- 2 tablespoons sherry wine
COPPER CARROTS

Mix the last 7 ingredients in a blender
- 5 cups cooked firm carrots
- 1 medium onion sliced
- 1 medium green pepper sliced
- 1 can tomato soup
- 1/4 cup vegetable oil
- 1 teaspoon Worcestershire sauce
- 1 cup sugar
- 3/4 cup vinegar
- 1 teaspoon salt
- 1 teaspoon mustard
PARMESAN CHEESE STRAWS

Preheat oven to 400 degrees
- 1/2 cup grated Parmesan cheese
- 2 teaspoons chili powder
- 1/2 teaspoon ground cumin
- 3 sheets phyllo dough at room temperature
REFRIGERATOR PICKLES

- 8 tablespoons canola oill
- 1 750 ml bottle red Burgundy wine
- 8 oz. pancetta or other thick bacon cut into 1/4” cubes
- 2 onions cut into 1/8” thick rounds
- 5 carrots (about 1 lb.) peeled
- cut into 1/4” thick rounds
- 3 parsnips (about 1 lb.) peeled, cut into 1/4” thick rounds 1 dried bay leaf
- 3 springs fresh thyme
- 5 springs fresh flat-leaf parsley
- 10 whole black peppercorns
- 4 lb. potatoes peeled cut into 1/4” thick rounds
- 1-1/2 cups heavy cream
- 12 tablespoons (1-1/2 sticks) unsalted butter
- 1/2 teaspoon freshly grated nutmeg
- 1 pound pearl onions peeled
- 1-1/2 lb. button mushrooms cleaned, cut into quarters
GIANT OATMEAL RAISIN COOKIES

In large bowl cream butter, sugar, vanilla and salt until fluffy
- 1 cup butter or margarine, softened
- 1 cup packed brown sugar
- 2 teaspoons vanilla
- 1/4 teaspoon salt
- 2/3 cup raisins
- 2-1/2 cups rolled oats (not instant)
- 1-1/4 cups whole-wheat flour mixed with 1 teaspoon baking soda
CORN CASSEROLE

Beat eggs well. Add sour cream and continue to beat until well-blended

- 8 ounce sour cream
- 1 teaspoon sugar
- 1 cam cream-style corn
- 1 can whole kernel corn including liquid
- 5 tablespoons melted margarine
- 1 box corn bread mix
