GINGER SNAPPERS

Heat oven to 350 degrees. Lightly grease cookie sheets
- 2-1/2 cups all purpose flour
- 1 tablespoon plus 2 teaspoons ground ginger
- 2 teaspoons ground cinnamon
- 2 teaspoons baking soda
- 1/2 teaspoon salt
- 1-1/2 sticks (3/4 cup) unsalted butter, softened
- 1 cup firmly packed dark brown sugar
- 1 large egg at room temperature
- 1/4 cup unsulphured molasses
- 1 tablespoon freshly grated lemon peel
- 1/4 cup granulated sugar
- 21 whole unblanched almonds
HONEY ANGEL BISCUITS

Combine yeast and 2 tablespoons warm water in measuring cup let stand 5 minutes
- Honey Butter:
- 1 (1/4 oz.) active dry yeast
- 2 tablespoons warm water (105-115 degrees)
- 5 cups all-purpose flour
- 1 tablespoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 cup shortening
- 2 cups buttermilk
- 3 tablespoons honey
- Honey butter
- 1/2 cup butter or margarine softened
- 1/4 cup honey
GRILLED SHRIMP, ORANGE AND WATERMELON SALAD

Preheat oven to 400 degrees F
- Vegetable cooking spray
- 1/2 cup coarsely chopped dry-roasted peanuts
- 1/2 teaspoon canola oil
- 1/2 teaspoon sugar
- Kosher salt and freshly ground black pepper
- 2 cups fully cooked, frozen, shelled edamame (green soybeans)
- 16 jumbo shrimp, unpeeled
- 5 oranges
- 1/2 cup hoisin sauce
- 1/2 cup fresh lime juice
- 2 garlic cloves, minced
- 1 teaspoon minced fresh ginger
- 6 cups loosely packed torn red leaf lettuce (about 6 ounces)
- 2 (4-ounce) bags watercress, stemmed
- 2 pounds red seedless watermelon, peeled and cut into 1⁄2-inch cubes (about 4 cups)
- 4 green onions, thinly sliced
- 1/4 cup chopped fresh cilantro
- 1/4 cup chopped fresh basil
- Special equipment: wooden skewers, soaked in water for 30 minutes
ORANGE CHIFFON CAKE

- Orange Glaze:
- 3-1/2 cups sifted cake flour
- 1 tablespoon baking powder
- 1 teaspoon salt
- 1-1/3 cups sugar, divided
- 1/2 cup vegetable oil
- 3 egg yolks beaten
- 3 tablespoons orange rind
- 3/4 cup orange juice
- 5 egg whites
- 1/2 teaspoon cream of tartar
- Fresh orange glaze
- 3 cups sifted powdered sugar
- 1/8 teaspoon salt
- 2-1/2 teaspoons orange rind
- 1/4 teaspoon orange extract
- 3-1/2 to 4 tablespoons orange juice

Generously grease a 12-cup bundt pan or 10-cup tube pan with shortening, coat pan with nuts
- 2 tablespoons solid vegetable shortening
- 3/4 cup finely chopped nuts
- 12 snack size Milkway bars
- 1 cup buttermilk, Plain yogurt or sour cream
- 1 cup (2 sticks) butter or margarine
- 1-1/2 cups water
- 1/2 teaspoon vanilla
- 4 eggs
- 2-1/2 cups flour
- 1 teaspoon salt
- 3/4 teaspoon baking soda
BROWNIES PALMER HOUSE

- 9 ounces bittersweet chocolate, chopped
- 1 cup (2 sticks) unsalted butter
- 1 cup plus 6 tablespoons sugar
- 2 large eggs
- 1 cup cake flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 2 cups coarsely chopped walnuts
EASY SWEET PICKLES

- 2 quart jar Kosher whole dill pickles
- 3 cups sugar
- 1 tablespoon vinegar
- 2 small onions sliced
- 4 sticks cinnamon broken
BEEF ASIAN WITH SNOW PEAS

In small bowl combine soy sauce, rice wine, brown sugar and cornstarch
- 3 tablespoons soy sauce
- 2 tablespoons rice wine
- 1 tablespoon brown sugar
- 1/2 teaspoon cornstarch
- 1 tablespoon vegetable oil
- 1 tablespoon minced fresh ginger
- 1 tablespoon minced garlic
- 1 lb. beef round steak cut into strips
- 8 ounces snow peas
TWO POTATO SAUTE WITH BACON AND CREAM

Bring large pot of salted water to boil
- 2 lbs. white skinned potatoes, peeled, cut into 3/4” pieces 1-1/2 lbs. red skinned sweet potatoes peeled cut into 1/4” pieces
- 7 bacon slices diced
- 3/4 cup finely chopped onion
- 1/2 cup chopped red bell pepper,
- 1/4 cup whipping cream
- 3 tablespoons chopped Italian parsley
