- 4 pounds small potatoes, such as baby Yukon gold
- 2 1/4 cups kosher salt
- 1 stick unsalted butter

- 3 cups Classic Mac, prepared through step 3 (recipe on page 93)
- 1 large egg yolk, lightly beaten Vi teaspoon paprika
- 5 slices bacon Vi cup mayonnaise
- 2 tablespoons Creole mustard
- % teaspoon ground black pepper
- Canola oil, for frying
- % cups cornstarch, divided, plus more
- 1 cup panko (Japanese bread crumbs)for dusting
Pork Cutlets, Breaded, (Pork Schnitzel)

Instructions 1. Place bread cubes on large microwave-safe plate
- 7 large high-quality sandwich bread , crusts removed, cut into 3/4-inch cubes (about 4 cups)Panko bread crumbs is better.
- 1/2 cup unbleached all-purpose flour
- 2 large eggs
- 2 cups plus 1 tablespoon vegetable oil
- 1 pork tenderloin (1 1/4 pounds). trimmed of fat and silver skin and cut on angle into 4 equal pieces (see illustration below)
- Garnishes
- 1 lemon , cut into wedges
- 2 tablespoon chopped fresh parsley leaves
- 2 tablespoons capers, rinsed
- 1 large hard-cooked egg, yolk and white separated and passed separately through fine-mesh strainer (optional)
Italian Meatball Buns

These soft little rolls come with a surprise inside—savory Italian meatballs
- 12 12 12 frozen bread dough dinner rolls
- 1 1 1 package (12 ounces) frozen fully cooked Italian meatballs, thawed
- 2 2 2 tablespoons olive oil
- 1/4 1/4 1/4 cup grated Parmesan cheese
- 1/4 1/4 1/4 cup minced fresh basil
- 1-1/2 1-1/2 1-1/2 cups marinara sauce, warmed
- 1 1 25-30 . Let dough stand at room temperature 25-30 minutes or until softened.
- 3 3 to 350°. 12-15 2 to 350°. Bake buns 12-15 minutes or until golden brown. Brush tops with oil; sprinkle with cheese and basil. Serve with marinara sauce. Yield: 2 dozen.
Salsa, Mango

In med. bowl stir mango, cucumber, lime juice; lime zest salt and cayenne
- 1 mango, peeled and finely chopped
- 1/2 seedless cucumber, peeled and finely chopped
- 2 tablespoons fresh lime juice
- 1/2 teaspoon freshly grated lime peel (zest)
- 1/4 teaspoon salt
- 1/8 teaspoon cayenne
