Bourbon-Glazed Pound Cake (10-inch)

Makes 1 (10-inch) cake, Bake from Scratch
- 2 cups (460 grams) butter, softened
- 2 3/4 cups (573 grams) granulated sugar
- 6 large eggs, room temperature
- 3 3/4 cups (525 grams) all-purpose flour
- 1/4 teaspoon (0.5 gram) ground nutmeg
- 1/8 teaspoon (0.75 gram) kosher salt
- 1/2 cup (123 grams) whole milk
- 1 teaspoon (5 grams) orange zest
- 1 teaspoon (2 grams) vanilla extract.
- Bourbon Glaze (recipe follows)
- 1 cup (210 grams) granulated sugar
- 1/2 cup (118 grams) bourbon
- 7 tablespoons (105 grams) butter

- 1/4 cup butter
- 1 (16 ounce) package sliced mushrooms
- salt to taste
- 1/4 cup all-purpose flour, or as needed
- 1 quart beef stock
- 1 pinch ground black pepper to taste

- 2 small white onions, chopped
- 3 packages (8-ounces each; 24- ounces) cream cheese, room temperature
- 3 large eggs
- 2 cans (10-ounces each) diced tomatoes and green chilies, drained (Ro-Tel)
- 2 cups (6-ounces) cheddar, shredded
- 1/3 cup *whole-kernel corn
- 2 tablespoons dry ranch dressing mix
- 1 package (1.25-ounce) taco seasoning mix
- 1/8 teaspoon ground red pepper
- Garnish: sour cream, shredded Cheddar cheese, diced tomatoes, and chopped green bell peppers.
