Pan-Fried Chicken Strips

Heat a large frying pan. Add the oil, chicken strips, garlic, and green onions
- 2 tablespoons olive oil
- 2 pounds chicken breasts, cut into 1/2" wide strips
- 2 cloves garlic, crushed
- 6 green onions, chopped
- 4 tablespoons marsala wine
- 2 tablespoons lemon juice
- salt and pepper, to taste
Vinaigrette

Combine ingredients in a small jar
- 6 T olive oil
- 3 T apple cider vinegar
- 1 tsp granulated sugar
- 1/2 tsp paprika
- 1/4 tsp onion salt
- pepper to taste
Mulled Wine

Pour juice into large saucepan
- 3 C cranberry cocktail juice
- 10 whole cloves
- 3 cinnamon sticks, about 2" in length
- 1/4 tsp nutmeg
- 1/4 C honey
- 1 orange, sliced
- 3 lemon slices
- 3 C dry red wine
Peach Glazed Chicken

Arrange chicken on foil-lined baking tray
- 8 chicken pieces
- 1/2 cup peach jam
- 1/4 cup ketchup
- 2 tablespoons soy sauce
- 1 tablespoon dijon mustard
- 1 teaspoon worcestershire sauce
- 1/2 teaspoon salt
- 1/8 teaspoon pepper
- 1/4 teaspoon garlic powder
Beef Stroganoff

Combine flour, salt, pepper and paprika in plastic bag
- 1/3 C all-purpose flour
- 1 tsp salt
- 1/4 tsp pepper
- 1/2 tsp paprika
- 2 lbs beef round steak, cut into 1/2" thick strips
- 1 1/2 C chopped onion
- 1/4 tsp garlic powder
- 14 oz canned tomatoes, with juice, broken up
- 1/4 C ketchup
- 2 tsp beef bouillon powder
- 2 T sherry
- 2 C sliced fresh mushrooms
- 1 C light sour cream
Apricot Pineapple Meatballs

In large skillet, heat oil over medium heat
- 1 tablespoon vegetable oil
- 1 cup chopped red or yellow cooking onion
- 2 stalks celery, sliced
- 1 sweet yellow pepper, diced
- 2 cloves garlic, minced
- pinch cayenne
- 1/2 cup apricot jam
- 1 can pineapple tidbits
- 1/4 batch Freezer Meatballs
- 2 teaspoons cornstarch
- 2 tablespoons finely chopped fresh parsley
Pecan Crusted Chicken

Preheat oven to 425. Trim any excess fat from chicken
- 4 small boneless skinned chicken breast halves
- 2 tablespoons honey
- 2 tablespoons dijon mustard
- 1 cup pecans
- 2 tablespoons dry bread crumbs
- 2 tablespoons flour
- 2 tablespoons butter, softened
- 1/4 cup chopped chives
Pasta e Fagioli

Cook bacon in medium frying pabn on medium until crisp
- 6 bacon slices, diced
- 1 C chopped onion
- 1 C sliced celery
- 1 C sliced carrot
- 1 tsp dried oregano
- 1 tsp dried basil
- 2 garlic cloves, minced
- 1/2 tsp pepper
- 19 oz can wite kidney beans, rinsed and drained
- 28 oz can diced tomatoes, with juice
- 3 C chicken stock
- 1 C water
- 1/4 C tomato paste
- 2 bay leaves
- 1 C very small pasta (Tubetti)
- 2 T chopped fresh parsley
- 1/4 C grated Parmesanh cheese
Lemon-Thyme Chicken with Sweet Gnocchi

Cook gnocchi until al dente
- Chicken:
- 1 lb potato gnocchi
- 2 T butter
- 1/2 tsp cinnamon
- 2 T sugar
- grated Parmigiano
- 1/4 cup flour
- 1/2 tsp coarse salt
- pepper, to taste
- 1/2 tsp poultry seasoning
- 1 1/2 bls boneless skinless chicken breasts
- 3 T extra-virgin olive oil
- 2 T butter
- 1 medium onion, chopped
- 1 C low sodium chicken broth
- juice of 2 lemons
- 6 to 8 sprigs fresh thyme, stipped and chopped
