Maple Glazed Carrots

Peel carrots, cut diagonally into 1/4 inch thick slices
- 2 pounds carrot
- 1/2 cup vegetable or chicken stock
- 1/4 cup maple syrup
- 1 tablespoon butter
- 2 tablespoons chopped walnuts, toasted
Orange Chicken

Put first 5 ingredients into paper or plastic bag
- 1/3 cup all-purpose flour
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 1 teaspoon paprika
- 1/8 teaspoon ground cinnamon
- 3 pounds chicken pieces
- 1/2 cup sliced onion
- 1 tablespoon butter
- 3/4 cup frozen concentrated orange juice, thawed
Mini Cheddar Biscuits

Mix as usually for biscuits Bake in 450 oven for 15 minutes
- 1 C flour
- 1 T sugar
- 1 tsp baking powder
- 1 tsp salt
- 3 T shortening
- 1/3 C shredded sharp cheddar
- 1 T chopped chilis
- 1 T parsley
- 1/3 C buttermilk
- 1 T melted unsalted butter
Old Fashiioned Stuffing

Melt butter in a large fry pan over medium heat
- 1/4 cup butter
- 1 large onion, finely chopped
- 3 stalks celery, finely chopped
- 8 cups day-old bread cubes
- 2 teaspoons sage
- 2 teaspoons savory
- 1 teaspoon seasoning salt
- 1/4 teaspoon ground pepper
- 1 cup turkey or chicken broth, approximately
Oven-Fried Chicken

Cut 2 deep incisions into the thickest part of each of the drumsticks to provide for even cooking
- 3 pounds chicken drumsticks
- 3/4 cup buttermilk
- 2 tablespoons olive oil
- 1 cup cornmeal
- 1 cup dry breadcrumbs
- 1/2 teaspoon chili powder, optional
- 2 eggs
- 2 tablespoons unsalted butter, melted
Twilight Time Turkey Patties and Cranberry Sauce

Grind pecans. Mix with potato flakes in a shallow dish
- 1 handful pecan pieces
- 1 Cup ionstant mashed potato flakes
- 1 1/3 lb ground turkey breast
- 1 small white onion
- 1 handful chopped fresh flat-leaf parsley
- 2 sprigs fresh thyme, stripped and chopped leaves
- 1 tsp poultry seasoning
- salt and freshly ground black pepper, to taste
- 2 T extra-virgin olive oil
- 1 can whole berry cranberry sauce
Three Berry Butter Cake

Preheat oven to 350. Grease 13x9x2 metal pan; line with waxed paper
- 1/2 C unsalted butter
- 1/4 C heavy cream
- 3 eggs, room temperature
- 1 1/4 C sugar
- 1/2 tsp salt
- 2 tsp finely grated lemon zest
- 2 tsp baking powder
- 1 tsp vanilla
- 2 1/2 C cake flour (not self rising)
- 6 C mixed berries (raspberry, blackberry, blueberry)
- 2 T icing sugar
Sunny Mornning Muffins

Measure first 5 ingredients into large bowl
- 2 C flour
- 2/3 C sugar
- 1 tsp cinnamon
- 1 tsp baking soda
- 1/2 tsp salt
- 2 eggs
- 14 oz can crushed pineapple, drained
- 1 C grated carrot
- 1/2 C cooking oil
- 1 tsp vanilla
- 1/2 C medium sweetened coconut
Barbecued Pork Chops

Combine marinade ingredients in plastic bag
- Marinade:
- 6 loin pork chops (1/2" thick)
- 6 apple rings
- 1/2 C dry sherry
- 1/4 C vegetable oil
- 3 green onions, finley chopped
- 1 clove garlic, finely chopped
- 1/2 tsp salt
- 1/2 tsp thyme
- 1/4 tsp pepper
Teriyaki Sirloin

Combine first 7 ingredients in small bowl
- 2/3 C dark soy sauce
- 2 T lemon juice
- 2 T red wine vinegar
- 2 tsp ground ginger
- 2 T brown sugar, packed
- 1 T ketchup
- 1 lb top sirlain steak (1/4" thick
