Champagne Punch

Pour champagne, cointreau, and ginger ale into punch bowl
- 25 oz champagne or sparkling white wine
- 6 oz Cointreau
- 8 C ginger ale
- orange or lime slices for garnish
Herbed Turkey Spaghetti Sauce

Heat oil in a large non-stick saucepan over medium-high heat
- 3/4 pound ground turkey
- 2 teaspoons olive oil
- 2 cloves garlic, minced
- 1 medium onion, chopped
- 1 medium carrot, chopped fine
- 2 teaspoons oregano
- 1 teaspoon basil
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 796 milliliters canned tomatoes, undrained
- 1/4 cup ketchup
- 1 tablespoon worcestershire sauce
- 1 bay leaf
- 1/2 cup grated cheddar cheese
- 1/4 cup chopped fresh parsley
Gourmet Burgers

Combine first five ingredients in bowl
- 1 lb lean ground beef
- 2/3 C finely chopped onion
- 3/4 C finely chopped celery
- 7 salted soda crackers, crushed
- 1 C hand-crushed corn flakes
- 1 large egg
- 1 T plum sauce
- 2 tsp liquid smoke
- 1 tsp soy sauce
- 1/2 tsp whole oregano
- 1/2 tsp salt
- 1/4 tsp pepper
- 1 T flour
- 6 hamburger buns, split and buttered
Apricot Buttermilk Muffins

- Apricot Butter:
- 1 1/2 C roughtly chopped dried apricots
- 1/4 C brandy
- 3 C self-raising lfour
- 125 g butter, chopped
- 1/2 C sugar
- 2 eggs, lightly beaten
- 3/4 C buttermilk
- 60 g butter
- 1 C icing sugar
- 1 T brandy
Strawberry Shortcake

- 3/4 C sifted cake-and-pastry flour
- 1 tsp baking powder

- 1 1/2 C whipping cream
- 2 T granulated sugar
- 1 tsp vanilla
- 4 C fresh sliced strawberries
- Garnish:
- 1 tsp icing sugar
- 5 whole strawberries
Lemony Garlic Dill Green Beans

In large saucepan, heat oil over medium heat
- 3 tablespoons vegetable oil
- 2 cloves garlic, minced
- 2 tablespoons chopped fresh dill
- 2 tablespoons lemon juice
- 1 teaspoon dijon mustard
- 1/4 teaspoon salt and pepper
- cooked green beans, crisp
Hot Turkey Salad

In a greased 2-qt baking dish, combine 1st 8 ingredients
- 4 cups cubed cooked turkey or chicken
- 2 cups diced celery
- 1 cup slivered almonds, toasted
- 1 teaspoon salt
- 1/2 teaspoon dried thyme
- 1/4 teaspoon pepper
- 1 1/2 cups mayonnaise
- 1 cup shredded cheddar cheese
- 1 cup crushed potato chips
Chicken Orange and Almond Stir-Fry

Mix orange juice and cornstarch
- 1/2 cup orange juice
- 1 teaspoon cornstarch
- 2 tablespoons vegetable oil
- 1 pound boneless chicken, cut in strips
- 1 medium onion, halved and thinly sliced
- 1 cup thinly sliced carrot
- 1 cup thinly sliced celery
- 1 cup broccoli florets
- 1 tablespoon grated ginger root or 1/2 tsp ground ginger
- 1/4 cup chicken stock
- 1 tablespoon grated orange rind
- 1/2 teaspoon salt
- 1/4 teaspoon pepper

- 4 whole boneless skinless chicken breast
- 10 sundried tomatoes
- 15 oz ricotta cheese
- 1 C shredded mozzarella
- 1/3 C grated parmesan
- 1 egg, beaten

- 1/2 tsp garlic powder
- 1/4 tsp pepper
- 2 T pine nuts
- 2 T currants
- 1/3 C butter
- 2/3 C sliced shallots
- 1 C chicken broth
- 1/2 C dry white wine
