Walnut Brandies Carrots

Wash and trim carrots. In sauce heat 2 T butter and add carrots
- 1 bl mini carrots
- 2 T unsalted butter
- 2 T water
- 1 T unsalted butter
- 1/2 C chopped walnuts
- 2 T brandy
Almond Chicken Salad

In large bowl stir together chicke, celery, apricots and almonds
- 2 C canned chicke breast meat
- 1 C sliced celery
- 1/2 C snipped dried apricots or golden raisins
- 1/3 C sliced almonds, toasted
- 1/2 C mayo
- 2 T frozen orange juice concentrate, thawed
- 1/2 tsp garlic powder
- 1/4 tsp ground black pepper
- lettuce
- tomato slices
Satay Peanut Sauce

Mix in saucepan. Simmer 5 minutes
- 1/4 C peanut butter
- 1/2 C water
- 2 T brown sugar
- 1 T soy sauce
- 2 tsp lemon juice
- 1/2 tsp crushed red chili peppers
- 1/4 tsp garlic powder (or 1 clove minced)
Ham Fritters

In a deep bowl combine flour, baking powder and salt
- 1 cup flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 2 eggs, lightly beaten
- 1 cup minced cooked ham
- 1/4 cup milk
- peanut oil
Broccoli Soup

In a stockpot, melt the butter over medium heat
- 6 T unsalted butter
- 1 leek, minced
- 1 carrot, peeled and minced
- 2 garlic cloves, minced
- 4 C chicken stock
- 1 head of broccoli, cut into small flowerets
- 1 C heavy cream
- pinch of cayenne pepper
- 1 tsp celery seed
Chicken in Thyme Cream Sauce

Toss chicken breasts in flour, shaking off any excess
- 4 boneless skinless chicken breast halves
- 1/4 can all-purpose flour
- 2 tablespoons olive oil
- 1 tablespoon chopped fresh lemon thyme or other herb
- 2 teaspoons dry sherry
- 1/2 cup whipping cream
Asparagus with Beurre Blanc

Steam the aspargus about 3-4 minutes
- 3 lbs asparagus
- Beurre Blanc
- 6 shallots, peeled and finely mined
- 3/4 C white wine vinegar
- 3/4 lb unsalted butter, cut into 1-inch pieces
- Coarse kosher salt and freshly ground white pepper, to taste
Raspberry Swirl

Crust: Crumble butter, flour and sugar until mealy
- Crust:
- 1/2 C butter
- 1 C all-purpose flour
- 2 T sugar
- Filling:
- Raspberry flavoured gelatin
- 3/4 C boiling water
- 1/2 15oz pkg frozen raspberries, partly thawed
- 1/2 C milk
- 16 large marshmallows
- 1 C whipping cream

- 1/2 lb butter, softened
- 2 1/2 C flour
- 3/4 C sugar
- 1/2 C sugar for topping
Sloppy Guiseppe

Cook beef over medium-high heat, breaking up
- 1 lb lean ground beef
- 1 onion, chopped
- half sweet green pepper, chopped
- 1/2 tsp dried oregano
- pinch salt and pepper
- 1 1/2 C pasta or tomato sauce
- 6 Kaiser rolls
