Italian Calzones

Preheat oven to 425. Lightly grease a very large baking sheet and sprinkle with cornmeal; set aside
- 2 tablespoons cornmeal
- 1/4 cup snipped oil-packed dried tomatoes
- 3 ounces thinly sliced smoked turkey &/or sliced pepperoni, chopped
- 1/4 cup chopped pitted ripe olives
- 3/4 cup shredded mozzarella cheese
- 2 10-ounce packages refrigerated pizza dough, or 1 batch basic pizza dough
- grated parmesan cheese
- cayenne, optional
Chicken and Spice Rice

In a large sauce pan or skillet, brown rice and orzo in oil
- 1 cup long grain rice
- 3/4 cup orzo
- 3 tablespoons oil
- 1 small onion, diced
- 1 stalk celery, diced
- 3 1/4 cups chicken stock
- 1 1/2 cups cooked diced chicken
- 1/2 teaspoon salt
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1/4 teaspoon paprika
- 1/4 teaspoon chili powder
- 1/4 teaspoon oregano
- 1/4 teaspoon thyme
- 1/4 teaspoon basil
- 1/8 teaspoon black pepper
- 1/8 teaspoon white pepper
- 1/4 teaspoon cayenne
- 2 tablespoons butter
Lemon Olive Meatballs

Partially cook bacon. Mix all other ingredients
- 1 pound ground beef
- 3 tablespoons lemon juice
- 1 teaspoon salt
- 1 cup grated cheddar cheese
- 12 olives, minced
- 1 cup soft bread crumbs
- 1/2 cup mink
- 1 egg, beaten
- 12 bacon slices
Meatballs with White Wine, Bay leaves, Lemon

In a large bowl, combine beef, cheese, bread crumbs, parsley, lemon peel, and salt
- 8 ounces ground beef, pork, or a mixture
- 2/3 cup grated Pecorino Romano cheese
- 1/2 cup fine dry breadcrumbs
- 1/4 cup snipped fresh parsley
- 1 teaspoon finely shredded lemon peel
- 1/4 teaspoon salt
- 1 egg, beaten
- 3 tablespoons all-purpose flour
- 2 tablespoons olive oil
- 3/4 cup dry white wine
- 2 cups water
- 4 bay leaves
- 1 tablespoon lemon juice
Chicken Parmesan

In small mixing bowl, combine cheese and seasoning
- 1/3 cup grated parmesan cheese
- 1/4 teaspoon italian seasoning, crushed
- boneless skinless chicken breast halves
- 1/4 cup sliced green onions
- 1 tablespoon butter
- 1 tablespoon flour
- 1/2 cup skim milk
- 5 ounces frozen chopped spinach, thawed & drained
Cheeseburger Puffs

Heat oil in medium pan on medium
- 1 tsp cooking oil
- 1/2 lb lean ground beef
- 1/2 C all-purpose flour
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- 1/8 tsp salt
- 1/2 C water
- 1/4 C butter, cut up
- 2 large eggs
- 1/2 C grated medium cheddar cheese
- 2 T finely chopped green onion
- 1/4 tsp pepper
Rustic Rub

- 8 T paprika
- 3 T cayenne
- 5 T fresh pepper
- 6 T garlic powder
- 3 T onion powder
- 6 T salt
- 2 1/2 T dried oregano
- 2 1/2 T dried thyme
Marinated Mushrooms

Trim the stems of the mushrooms and wipe the caps clean with a damp towel
- 1 pound medium or small mushroom
- 2 tablespoons sherry vinegar
- 1 tablespoon balsamic vinegar
- 1 teaspoon freshly ground allspice
- 1/2 cup olive oil
- 2 tablespoons small capers
Potato Cakes

Add ingredients to mashed potatoes
- 4 C peeled cubed potatoes, cooked and mashed
- 1/4 C whole milk
- 2 T unsalted butter
- 2 C fresh spinach, sauteed and squeezed
- 2 T grated onion
- 1 egg, beaten
- 2 T flour
- 1 tsp baking powder
- salt and pepper to taste
- 4 T olive oil to saute cakes
Spiced Pecan Pancakes

In large bowl, mix four, pecans, sugar, undissolved yeast, cinnamon and salt
- 2 1/4 C flour
- 2/3 C finely chopped pecans
- 3 T sugar
- 1 8gram pkg quick rise yeast
- 1 1/2 tsp cinnamon
- 1 tsp salt
- 2 C warm milk (105 - 115 F)
- 1/4 C butter, melted
- 1 large egg
