Winter Chicken Salad

Pull skin from breasts. Dice meat
- 3 chicken breasts
- 1 lb carrots, peeled and sliced thin
- 2 C sliced celery
- 1 small onion, chopped
- 1/4 C water
- 1 chicken bouillion cube
- 2 tsp salt
- 1/2 C mayonnaise or salad dressing
Mustaches

Beat butter on high 30 seconds
- 1/2 C butter
- 1/4 C cocoa
- 1 tsp baking powder
- 1/4 tsp cinnamon
- dash ground cloves
- 1/2 C honey
- 1 egg
- 2 C flour
- 1/2 C finley chopped almonds
- 1/2 C finely chopped walnuts
- chocolate espresso icing
Strawberry Roll

Preheat oven to 375F. Line rimmed cookie sheet with heavily buttered paper
- Cake:
- 4 eggs
- 1 C sugar
- 5 T water
- 1 C flour
- 1 tsp baking powder
- 1 tsp vanilla
- pinch salt
- Filling:
- 2 C heavy cream, whipped with sugar to taste
- 1 pint strawberries, sliced
- icing sugar

- 1 cup non-fat vanilla yogurt
- 2 tablespoons brown sugar
- 1 1/2 tablespoons frozen orange juice concentrate
Fish with Beer Batter

Sift the flour, baking powder and 1/2 teaspoon salt into a large bowl
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 3/4 cup beer
- light olive oil for deep frying
- 4 6 oz pieces white fish fillets, skinned and boned
Marinated Lemon Grass Beef

Place the beef strips in a large glass bowl
- 1 pound boneless sirloin steak , cut into thin strips
- 3 stems lemon grass, white part only, finely chopped
- 3 cloves garlic, finely chopped
- 2 tablespoons fish sauce
- 2 teaspoons sugar
- 1 tablespoon oil
- 1/4 cup chopped roasted peanuts
Chicken Crepes with Orange and Almonds

In saucepan combine chicken, oranges, almonds and Bechamel sauce; mix well
- 3 cups cooked chicken, diced
- 1 cup mandarin orange sections
- 1/2 cup sliced almonds
- 2 cups Bechamel sauce
- 8 crepes
- BECHAMEL SAUCE
- 4 tablespoons butter
- 3 tablespoons flour
- 2 cups milk
- 1 tablespoon sherry
- salt, to taste
Chicken Fingers

- 4 boneless skinless chicken breasts
- 1/2 cup butter
- 3/4 cup fine dry breadcrumbs
- 1/4 cup grated parmesan cheese
- 3/4 teaspoon salt
- 1/4 teaspoon dried basil
- 1/4 teaspoon ground thyme
