- 8 Cloves Garlic, finely chopped
- 2 Anaheim Chiles, stems removed and coarsely chopped

Garlicky Tortellin, Spinach and Tomato Soup

Fresh or frozen cheese tortillini, lots of garlic and fresh spinach make for a hearty soup
- 2 Tbsp unsalted butter
- 6 to 8 cloves garlic, chopped
- 1/2 cup chopped onion
- 4 cups reduced-sodium chicken broth
- 2 cups water
- 9 oz fresh or frozen cheese tortellini
- 14-1/2 oz canned diced tomatoes, with their liquid
- 10 oz spinach, washed and stemmed, coarsely chopped
- 8 to 10 basil leaves, coarsley chopped
- 1 egg
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
Halibut - Baja Fish Tacos

Heat about 3" vegetable oil in a medium pot over medium-low heat until a deep-fry thermometer registers 375 deg
- vegetable oil, for frying
- 1/4 red cabbage, thinly sliced (about 1-1/2 cups)
- 1/2 cup fresh cilantro, roughly chopped
- juice of 1 lime, plus wedges for serving
- 2 Tbsp honey or agave nectar
- 1/2 cup mayonnaise

- 12 slices white bread, crusts trimmed

- 1/4 cup A.1. sauce
- 4 Kraft singles
- 4 hamburger buns
- 4 lettuce leaves

Four Cheese Chicken

Preheat oven to 400 deg. In a small bowl, combine ricotta, mozzarella, and Parmesan
- Sauce:
- 1/2 cup part-skim ricotta cheese
- 1/4 cup shredded part-skim mozzarella cheese
- 2 tbsp grated Parmesan cheese
- 1 cup chopped cooked spinach
- 4 chicken cutlets (4 oz each), pounded 1/4" thick
- 1 tsp butter or margarine
- 3/4 cup skim milk
- 1/2 cup reduced-sodium chicken broth
- 1 tbsp cornstarch
- 1 tsp butter or margarine
- 3/4 cup shredded reduced-fat cheddar cheese
Garlic Stuffed Chicken Breasts

In a small saucepan, bring water to a boil
- 2 cups water
- 8 cloves garlic, unpeeled
- 6 tbsp chopped fresh parsley, divided
- 1 tsp grated lemon peel
- 1/4 tsp salt
- 4 boneless chicken breasts, with skin (4 oz each)
- 1/4 cup reduced-sodium chicken broth
- 2 tbsp fresh lemon juice
Slow Cooker Carnitas

1. In a slow cooker, add cut pork, salt, pepper, oregano, cumin, garlic, onion, bay leaves, and lime juice
- 3 1/2 - 4 pound boneless pork butt/shoulder, cut into six equal pieces
- 2 teaspoons salt
- 1 teaspoon pepper
- 1 tablespoon oregano
- 1 tablespoon cumin
- 8 cloves garlic, crushed
- 1 medium onion, quartered
- 3 bay leaves
- 1 lime, juiced
- 1 large orange, juiced (save the spent halves)
- Optional Toppings
- Tortillas/taco shells
- Rice

Instant Pot Chipotle Chicken & Vegetable Soup

1. Set the Instant Pot to “Saute” and melt the friendly fat
- 3 3 to tbsp friendly fat to cook in such as butter, coconut oil, avocado oil, tallow, or lard
- 1 1 1 medium onion, diced
- 2 2 2 medium carrots, peeled and diced
- 2 2 2 medium celery, diced
- 1/2 1/2 1/2 medium red bell pepper, diced
- 4 4 4 cloves of garlic, minced
- 2 2 2 tbsp tomato paste
- 1 1/2 1 1/2 1/2 quarts bone broth (You can use Instant Pot Broth, or here is my slow cooker method)
- 1 1 1 cup full fat coconut milk (this is my favorite brand that doesn't have gums, fillers, or sweeteners added)
- 3 3 3 cups chopped cooked chicken (Use leftovers from your roasted chicken, slow cooker chicken, or Instant Pot chicken)
- 8 8oz 8oz gluten free noodles
- 1/2 1/2 1/2 lb baby kale, chopped
- to salt and pepper to taste
