Cashew Nut Salad
By rossboys
Mix dressing ingredients well and add grated Swiss cheese to dressing
- Dressing:
- 1 head lettuce, cut up for salad
- 1 cup cashew nuts, halved
- 1 cup grated Swiss cheese
- 1/2 cup thinly sliced red onion
- crumbled blue cheese
- crumbled bacon bits
- dried cherries
- 1 cup mayonnaise
- 1/3 cup sugar
- 1/4 cup white vinegar
- 1 tsp salt
- dash of pepper
Spicy Chicken Bow Tie Pasta

Boil water for pasta and salt water prior to adding pasta
- 1 ⁄2 lb bow tie pasta
- 3 chicken breasts
- 2 cups low sodium chicken broth
- 1 teaspoon red pepper flakes
- salt and pepper
- 1 cup heavy cream (substitute evaporated milk for less fat)
- 1 ⁄2 cup parmesan cheese
- 2 garlic cloves
- 4 -6 large basil leaves
- 1 ⁄2 cup yellow pickled pepper
Beef and Vegetable Kabobs

- 1 lb boneless sirloin steak, trimmed & cut into 1" cubes
- 8 (1") pieces yellow bell pepper (about 1 pepper)
- 8 small mushrooms (about 4 oz)
- 8 (1") pieces green onions (about 2)
- 8 cherry tomatoes
- 1 tsp kosher salt
- 1/2 tsp dried thyme
- 1/4 tsp freshly ground black pepper
- Cooking spray
- 2 tsp canola oil
Chili-Rubbed Grilled Pork Tenderloin

In a small bowl, combine the ancho chili powder, cumin, garlic powder, salt and cayenne
- 1 tsp ancho chili powder
- 1/2 tsp ground cumin
- 1/4 tsp garlic powder
- 1/4 tsp salt

- 1 pork tenderloin (~ 1-1/4 lb)
Tilapia - Sauteed with Capers

This piquant sauce is perfect over plain white fish
- 3/4 cup chicken broth
- 1/4 cup fresh lemon juice
- 1-1/2 tsp capers
- 1 tsp butter
- 1 tsp vegetable oil
- 2 6oz tilapia or sole fillets
- 1/4 tsp salt
- 1/4 cup flour
- 2 tsp butter
- Lemon wedges (optional)
Lelli's Minestrone Soup

In a large stock pot over medium heat, stir and cook onions in butter until soft
- 8 Tbsp butter
- 1 1/2 cups chopped onions
- 4 (14 ounce) cans chicken broth
- 4 (15 ounce) cans mixed vegetables, with liquid
- 2 (16 ounce) cans kidney beans, with liquid
- 2 (14.5 ounce) cans whole peeled tomatoes, with liquid
- 1 (16 ounce) package frozen chopped spinach
- 2 Tbsp tomato paste
- 4 1/4 tsp garlic powder
- 4 tsp dried parsley
- 1/2 tsp salt
- 1 tsp ground black pepper
- 1 tsp dried basil
- 1 cup uncooked elbow macaroni
- 1/2 cup grated Parmesan cheese
- 1 cup canned garbanzo beans, drained
- 4 cups heavy cream
- 1/2 cup grated Parmesan cheese for topping
Cheese Fondue

Shred cheese and combine with remaining ingredients in saucepan
- 10 oz baby gouda cheese
- 1 clove garlic, minced
- 3/4 cup white wine
- 1 Tbsp cognac
- 1 Tbsp corn starch
- 1 French bread, cut into pieces for dipping.
Ham & Potato Breakfast Casserole

Heat oven to 350 degrees. Mix all ingredients, except paprika, in large bowl
- 1 (6 oz.) pkg. hash brown potatoes
- 1 1/2 c. water
- 1 c. milk
- 1/2 c. sliced green onions (with tops)
- 1 tsp. salt and pepper
- 5 eggs, beaten
- 1 1/2 c. shredded Cheddar cheese
- 1 c. chopped fully cooked smoked ham
- 1 tsp. dry mustard

Grilled Philly Cheese Steak
