Apple Sausage Stuffing

Ingredients

  • 1 1/2 lbs pork sausage
  • 1 tsp salt
  • 1 tsp dried thyme, crumbled
  • 1 tsp dried sage, crumbled
  • 1/2 tsp nutmeg
  • 1/2 tsp freshly ground pepper
  • 1/2 tsp ground allspice
  • 1/4 c cognac
  • 13-14 cubes sliced day-old French bread
  • 10 Tbsp unsalted butter
  • 2 c finely chopped peeled tart green apples
  • 1 1/2 c chopped onion
  • 1 1/2 c chopped celery
  • 3/4 c chopped fresh parsley
  • 1 Tbsp ground sage
  • 1 1/2 tsp dried thyme, crumbled
  • 1 tsp salt
  • Freshly ground pepper

Step 1

Mix together pork sausage, salt, thyme, safe, nutmeg, pepper and allspice. Work together until well mixed; blend in cognac, cover, and refrigerate overnight.

Cut bread into cubes. Brown sausage in skillet over med heat until no longer pink, stirring and pressing with a fork to break up lumps. Drain on paper towels and add to bread cubes.

Melt butter, add apple, onion and celery and cook until vegetables begin to soften, stirring occasionally. Stir in parsley and cook 2 to 3 min longer. Add mixture to bread and toss gently. Blend in remaining ingredients, taste and adjust seasonings. Cool completely. This stuffing can be made one day ahead.
