Macadamia Nut Chicken

Salt and pepper the chicken breasts and set aside
- Chicken
- 4- 8 ounce skinned and deboned chicken breast
- 1/4 cup chopped macadamia nuts
- 3 cups of panko (Japanese breadcrumbs)
- 1/4 cups flour
- 1/2 cup milk
- 3 Whole eggs
- Salt and Pepper to taste
- Shoyu Cream Sauce (for the Chicken) -
- 2 cups heavy whipping cream
- 1/4 cup soy sauce
- 2 tbsp cornstarch
- 2 tbsp water
- White Cheddar Mashed Potatoes
- 2 1/2 lbs potatoes, peeled and cut into chunks
- 3 teaspoons salt (divided)
- 1/4 cup unsalted butter, at room temperature
- 1/4 cup sour cream
- 1/4 teaspoon white pepper
- 1 1/2 cups white cheddar cheese, grated
- 1/2 cup whipping cream
Swiss and Bacon Dip

Preheat the oven to 400 deg
- 8 slices bacon, chopped
- 8 oz cream cheese, softened
- 1/2 cup mayonnaise
- 2 rounded tsp Dijon mustard
- 1-1/2 cups shredded Swiss cheese
- 3 green onions, chopped
- 1/2 cup smoked almonds, coarsely chopped
- baby carrots for dipping
- cocktail size bread for dipping
Chunky Guacamole (Rachel Ray)

Mash avocado with lemon juice into a chunky paste
- 2 med ripe avocados, pitted and diced
- juice of 1 lemon
- 1 jalapeno pepper, seeded and finely chopped
- 1/2 small onion, finely chopped
- coarse salt, to taste

- Pizza:
- 1 Pizza Crust
- 2 Things of Fresh Mozzarella
- 2 cups Chicken Breast
- 1/2 cup Onion, diced
- 3 Avocados
- 7-10 Grape Tomatoes
Meatballs

Mix together meatball ingredients and shape into 24 1-1/2" meatballs
- Meatballs:
- 1 lb Bob Evans pork sausage
- 1 egg, slightly beaten
- 1/3 cup bread crumbs
- 1/2 tsp sage
- Sauce:
- 1/2 cup catsup
- 2 Tbsp brown sugar
- 1 Tbsp vinegar
- 1 Tbsp soy sauce
Hash Brown Bites

Preheat oven to 400 deg. Spray 2 mini-muffin tins with cooking spray
- 1 lb frozen hash brown potatoes, thawed
- 2 Tbsp butter, melted
- 1/2 cup tomato, diced
- 1/2 cup each red and green pepper, diced
- 1/2 cup Cheddar cheese, shredded
- 4 eggs, beaten
- 1 tsp black pepper
- 1/2 cup bacon, cooked & crumbled
- Nonstick cooking spray
Chicken Breast Stuffed with Garlic Spinach

- salt and pepper to taste
- 2 T olive oil
- 1/4 lb cremini mushrooms, cleaned, thinly sliced
- 3 lg cloves garlic, peeled, minced
- 1/2 cup raisins
- 6 cups baby spinach
- 1/2 cup shredded Italian blend cheese
- Pan sauce, optional
- 1/2 cup Madeira or white wine
- 1/2 cup chicken broth
- 1 T unsalted butter

- 1/8 tsp pepper
- 1 cup frozen peas, thawed and drained
