Sausage Potato Casserole

Preheat oven to 400 deg. Mix mayo, sour cream, onions and salt in large bowl
- 1 cup mayonnaise
- 1 cup sour cream
- 1 med onion, chopped
- 1/2 tsp seasoned salt
- 1 bag (1 lb, 14oz) frozen shredded hash browns
- 1 lb smoked sausage, cut into 1/4" thick slices
Greek Chicken with Angel Hair Pasta

- 1 lb uncooked angel hair pasta
- 1 Tbsp olive oil
- 4 (6oz) skinless, boneless chicken breasts, halved
- 2 cups chopped red onion
- 1 cup chopped yellow bell pepper
- 6 Tbsp fresh lemon juice
- 1 tsp dried basil
- 1/2 tsp dried oregano
- 2 (14.5oz) cans diced tomatoes with basil, garlic, and oregano
- 3/4 cup (3oz) feta cheese, crumbled
Spicy Deviled Eggs

Slice the eggs lengthwise into halves
- 12 hard-boiled eggs, peeled
- 1 packet ranch dressing mix
- 1/2 tsp cayenne pepper
- 2 Tbsp sweet pickle relish
- 1/4 cup mayonnaise
- 1/4 cup bottled ranch salad dressing
- 1 tsp prepared yellow mustard
Berry Delicious Spinach Salad

Combine salad ingredients in a large bowl
- berry vinaigrette:
- 1 pkg baby spinach
- 1/2 red onion, sliced thin
- 1/2 pint strawberries, sliced
- 3 oz blue cheese, crumbled
- 1/3 cup cashews
- 1 Tbsp seedless strawberry or raspberry jam
- 1/2 Tbsp Dijon mustard
- 1/4 cup raspberry vinegar
- 6 Tbsp extra virgin olive oil
- Salt and pepper, to taste
Chicken and Corn Enchiladas

Heat oven to 350 deg. Lightly oil 15x10x2 glass dish
- 3 cups shredded cooked chicken
- 1-1/2 cups sliced red onion
- 1-1/2 cups frozen corn kernels, thawed
- 3/4 cup sour cream
- 1/2 cup chopped fresh cilantro
- 1 tsp ground cumin
- 2 cups grated Monterey Jack cheese with jalapenos
- 3 cups thick and chunky mild salsa
- 3 cups red enchilada sauce
- 16 - 6 oz corn tortillas
Apple and Corn Bread-Stuffed Pork Loin

- 1-1/3 cups apple juice or cider, divided
- 1-1/2 tsp dried rubbed sage, divided

- 1 (4 lb) boneless center-cut pork loin roast, trimmed
- 1-1/2 tsp cornstarch
- 1 (14 oz) can fat-free, less-sodium chicken broth
Apple-Raisin Crisp

Preheat oven to 375 deg. Spray a shallow 2-1/2 qt baking dish with vegetable cooking spray
- 3/4 cup fresh whole-wheat bread crumbs
- 1/4 cup firmly packed light or dark brown sugar
- 3/4 tsp ground cinnamon
- 6 large Granny Smith or other baking apples, peeled, cored, and thinly sliced (about 7 cups)
- 1/2 cup raisins
- 1 Tbsp fresh lemon juice
- 1/3 cup apple cider or water
- 2 Tbsp unsalted butter, chilled and cut into small pieces
- Light frozen whipped topping, thawed, and ground cinnamon for garnish
Family Favorite Meat Loaf

Preheat oven to 350 deg. Arrange opened Roasting Bag in 13x9" baking pan
- 1 pkg McCormick Bag 'n Season Meat Loaf
- 1 Tbsp flour
- 2 slices bread, crumbled
- 1 egg
- 3/4 cup ketchup, divided
- 2 lbs ground chuck or lean ground beef
Chicken Arrabiata

1. Heat 1/4 cup of olive oil in a large skillet over medium heat
- 1/2 cup olive oil, divided
- 6 cloves garlic, sliced
- 1 tsp red pepper flakes
- 1 (28 oz) can diced tomatoes with garlic and olive oil
- 1/2 cup tomato sauce
- 1 bunch fresh basil, chopped
- 1 (12 ounce) package dried penne pasta
- 2 eggs
- 2 cups bread crumbs
- 1 tsp garlic powder
- 1 tsp salt
- 1 tsp pepper
- 1 lb thin chicken breast cutlets
Shrimp Roll

- 1 pound jumbo (21/25) shrimp, peeled and deveined
- 1/4 cup small-dice celery
- 3 tablespoons mayonnaise
- 1 heaping teaspoon Dijon mustard
- 1/2 teaspoon lemon juice
- Pinch salt
- Pinch ground white pepper
- 4 hot dog rolls (Eastern style—split on top)
- 1 tablespoon melted butter
