- 1 head garlic, separated into whole cloves, papery skin removed (about 20 cloves)
- 3 tablespoons olive oil
- 1 tablespoon butter
- 2 teaspoons herbes de Provence
- 1 teaspoon flour
- 1/4 cup chicken stock
- 1/2 lemon, juiced

Tilapia Broiled with Thai Coconut-Curry Sauce

Traditional English Cheddar Cauliflower Cheese Gratin

- 300 ml milk
- 220 g Mature cheddar cheese, finely grated

- 1 onion, cut into 4 thick slices
- 4 ribs celery, cut into chunks
- 1/2 cup red wine divided
- 1/4 cup water
- 1 lb mushrooms, sliced

- 6 cloves garlic, peeled, chopped
- 1/2 shallot, chopped
- 2 Tbsp parsley, washed, dried, chopped
