Blue Muffin Bundt Cake

1. For the blueberry cake: Preheat the oven to 325 degrees F
- For the Blueberry Cake:
- 1 cup unsalted butter, softened
- 2 cups sugar
- 3 large eggs
- 1 tablespoon vanilla extract
- 2 3/4 cups all purpose Gold Medal Flour
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 1/4 cup buttermilk
- Zest of 2 lemons
- 1 pound fresh blueberries
- For the Buttermilk Glaze:
- 3 tablespoons buttermilk
- 1 cup powdered sugar
- For the Oat Crumble Topping:
- 2 tablespoons butter
- 2 tablespoons brown sugar
- 3 tablespoons flour
- 2 tablespoons oats
- 2 tablespoons sliced almonds
Chicken Cordon Bleu Casserole

- 1 pkg (6oz) Stove Top Stuffing Mix for Chicken
- 1 can (10-3/4oz) reduced-sodium cream of chicken soup
- 1 Tbsp Grey Poupon Dijon mustard
- 1 lb boneless chicken breasts, cut into bite-size pieces
- 3 cups small fresh broccoli florets
- 12 slices deli smoked ham, chopped
- 6 Swiss cheese slices
New Potato Salad

In large bowl, stir together mayonnaise, onion, mustard and black pepper; set aside
- 3/4 cup mayonnaise
- 1/4 cup onion, finely chopped
- 1 Tbsp Dijon mustard
- 1-1/2 lb new potatoes (about 4-1/2 cups), quartered
- 1 cup smoked turkey breast, cubed
- 1 cup cucumber slices, quartered
- 1/2 cup red or green pepper strips
- 1/4 cup water
- 1/4 tsp black pepper
Marinated Pork Chops

Mix all ingredients and pour over pork chops and marinate at least 1 hour at room temperature

- 1 pkg onion-mushroom dry soup mix
- 1/3 cup water
- 1 boneless beef chuck roast (~ 2-1/2 lb)
- 6 med potatoes, quartered
- 6 med carrots, peeled, cut into 1" pieces

- 1 cup water

- 4 oz American cheese, cut up
Raspberry Coffee Ring

Preheat oven to 375 deg. Spray a 9" tube pan with vegetable cooking spray

- 2 cups reduced-fat baking mix
- 3/4 cup firmly packed light brown sugar
- 1/8 tsp ground nutmeg
- 1/2 cup refrigerated egg substitute
- 1/4 cup low-fat milk
- 2 Tbsp vegetable oil
- 1 tsp vanilla extract
- 2 cups fresh raspberries or unsweetened frozen raspberries
- 1/4 cup sliced almonds, toasted
- 2 Tbsp firmly packed light brown sugar
Sausage French Toast Bake (overnight)

In large skillet over medium heat, crumble and cook sausage until browned
- 1 package (16 oz.) Bob Evans Original Roll Sausage
- 2 apples, cored, and thinly sliced
- 2 tbsp butter
- 1/4 cup dried cranberries
- 1/2 cup orange juice
- 1 tsp. orange zest
- 1 loaf (16 oz.) hearty white bread, cut into 1" slices
- 3 cups whole milk
- 6 eggs
- 1/2 tsp. cinnamon

Cajun Shrimp Fettucine

Cook pasta according to directions, drain
- 4 to 6 oz uncooked fettucine
- 1/2 lb med shrimp, shelled & deveined
- 2 slices bacon, crisply cooked & diced
- 2 cloves garlic, minced
- 1/2 to 1/4 tsp ground red pepper
- 1 - 14.5 oz can stewed tomatoes, undrained
- 1 - 8 oz can tomato sauce
- Pinch each ground cinnamon & ground cloves
- 1 green bell pepper, cut into thin strips
