Thai Coconut Soup (for four)

Heat the oil in a large pot over medium heat
- 1-1/2 teaspoons vegetable oil
- 1 tablespoon grated fresh ginger
- 1/2 stalk lemon grass, minced
- 1 teaspoon red curry paste
- 2 cups chicken broth
- 1 tablespoon and 1-1/2 teaspoons fish sauce
- 1-1/2 teaspoons light brown sugar
- 1-1/2 (13.5 ounce) cans coconut milk
- 1/4 pound fresh shiitake mushrooms, sliced
- 1/2 pound medium shrimp - peeled and deveined
- 1 tablespoon fresh lime juice
- salt to taste
- 2 tablespoons chopped fresh cilantro
Not Your Mama's Instant Pot Shepherd's Pie

Directions: Place you pot on saute
- 4 Large Russet Potatoes (Pealed and Cubed)
- 1.5 pounds ground beef or turkey
- 1 packet beefy Onion Soup Mix
- 2 tbs butter
- 16 oz mixed veggies
- 2 cups water
- 1 cup sour cream
- 1/4 cup milk
- 1 Packet brown gravy mix
- 1 cup shredded cheddar
Blue Cheese and Asparagus Chicken Breasts

- nonstick cooking spray
- 6 - 4 oz chicken breasts, washed & patted dry
- 1/3 cup flour
- 1 - 10 -3/4 oz can low-salt, low-fat cream of chicken soup
- 2 oz blue cheese, crumbled
- 1/2 cup sauvignon blanc or dry white wine
- 1 lb fresh asparagus spears
Peppered Pork Tenderloins

- 2 tsp chopped fresh rosemary
- 1 tsp salt
- 2 pork tenderloins (about 2 lbs), trimmed

Chicken Thighs with Tomatoes, Olives, and Capers

Spread the chicken thighs out in the pan so this dish will cook quickly
- 8 skinless, boneless chicken thighs
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tsp vegetable oil
- 1 Tbsp bottled minced garlic
- 1 cup chopped fresh parsley
- 1/4 cup chopped pitted kalamata olives
- 2 tsp capers
- 1 14.5oz can no-salt-added diced tomatoes, undrained

In a mixing bowl, combine the dry ingredients
- Frosting:
- 2 cups flour
- 2 cups sugar
- 2 tsp baking soda
- 2 tsp ground cinnamon
- 1 tsp salt

- 4 eggs
- 2 jars (6oz each) carrot baby food
- 1 can (8oz) crushed pineapple, drained
- 1/2 cup chopped walnuts
- 1 8oz pkg cream cheese, softened
- 1/2 cup butter or margarine, softened
- 1 tsp vanilla extract
- 3-3/4 cups confectioners sugar
- Add'l chopped walnuts, optional

Prime Beef Scaloppine Alla Toscanini

Dredge the beef pieces in 1 cup of the flour in small batches, being careful to shake off any excess flour
- 4 lbs prime tenderloin of beef, sliced into 8 (8oz) pieces, 3/4" thick
- 1-1/2 cups all-purpose flour, divided
- 1 lb butter (4 sticks), divided
- 1-1/2 lbs white mushrooms, sliced 1/4" thick
- 8 oz Marsala wine
- 2 qts chicken stock
